    This super fun popping candy rocky road is packed with soft marshmallows, chewy gummi bears and mini M&Ms, all encased in smooth milk chocolate.

    Taking just 10 minutes to prepare, this easy rocky road recipe is one the kids will absolutely LOVE!

    If you and your family are big rocky road fans, you will LOVE this popping candy rocky road recipe! With chewy lollies and bursts of popping candy that crackle as you eat it, this is without doubt, the most fun rocky road you will ever eat!

    Whether enjoyed as an easy dessert, party food, or to satisfy a chocolate craving, rocky road is the easiest sweet treat that is guaranteed to bring a smile to anyone's face! From pretty white chocolate rocky road, crunchy Malteser's rocky road to a crowd-pleasing rocky road cheesecake, if you ask me, there is definitely a rocky road recipe for every occasion!

    • Easy no bake recipe - this recipe takes just 10 minutes to prepare, and you don't need to turn the oven on - also making it a perfect activity to make with kids.
    • Great for Christmas - not only does this homemade rocky road make a great gift for friends and family, but it is perfect for Christmas parties - or make into a festive rocky road wreath!
    • Nut free recipe - traditional rocky road is made with peanuts, but this recipe doesn't contain nuts.
    • Conventional and Thermomix - both methods are included in the recipe card at the end of the post.

    What You Need

    You need just 6 ingredients to make this rocky road recipe that is packed with M&M's, Gummi Bears and marshmallows!

    • Chocolate - I like to make a milk chocolate rocky road. However, you can substitute with white or dark chocolate if you prefer. Choose a high quality chocolate for melting (I like to use Cadbury, Lindt or Nestle). The chocolate is the main ingredient in this recipe, so choosing a good one makes all the difference.
    • Coconut oil - add a little coconut oil to your chocolate when melting will help with cutting the set rocky road in to neat pieces.
    • Marshmallows -  choose regular sized marshmallows for this recipe and cut in half. I use Pascall brand of marshmallows which is popular here in Australia.
    • Mini M&Ms -  or substitute with regular M&Ms or Smarties.
    • Popping candy -  ensure you use popping candy (not popping gum). I used Pop Rocks brand.
    • Gummi bears - try to choose soft gummi bears as they're easier to cut. If you have firmer gummi bears, chop them in smaller pieces before using.

    Equipment Required 

    • Baking tray - lined with baking paper.
    • Microwave safe bowl and microwave - or make rocky road in the Thermomix.

    Step By Step Instructions

    Taking just 10 minutes to prepare, making this rocky road recipe is as easy as 1, 2, 3: melt, mix, and chill!

    Step 1 - Melt The Chocolate

    Line the base and sides of an 18cm x 28cm baking tray with baking paper.

    Place the chocolate and coconut oil (optional) into a heatproof, microwave-safe bowl. Heat, uncovered, on 50% power, in 30 second bursts, stirring every time with a metal spoon, for 4-5 minutes or until the chocolate and coconut oil melts.

    TIP: It is important not to overheat the chocolate, otherwise it can become grainy.

    Remove from the microwave and stir until smooth.

    Step 2 - Mix

    Add the chopped marshmallows, mini M&Ms, popping candy and gummi bears. (Reserve a few M&Ms and gummi bears for decorating the top.)

    Stir until everything is thoroughly coated in the melted chocolate.

    All the ingredients mixed together and coated in milk chocolate in the bowl.

    Step 3 - Chill

    Spread the mixture into the prepared baking tray and decorate with the reserved gummi bears and mini M&Ms. 

    Place in the fridge for 2 hours or until completely set.

    Use a sharp knife to cut into slices.

    TIP: if you are having trouble cutting the slice, run your knife under hot water and then dry completely before cutting - the heat will help to cut the slice evenly.

    Expert Tips

    • How to slice rocky road neatly:
      • Remove the Rocky Road from the fridge at least 30 minutes before slicing - this will help it to stop cracking.
      • Use a large sharp knife to cut the rocky road (or check out my top tips for cutting rocky road here). 
    • Rocky Road can be made using a microwave, Thermomix or stove-top:
      • Microwave: see this post for tips on melting chocolate in the microwave.
      • Stove-top: melt the chocolate and coconut oil (optional) in a small bowl over a saucepan of boiling water (do not allow the water to enter the chocolate bowl).
    • Chopping the marshmallows - the easiest way to chop marshmallows is to cut them with sharp scissors. If the blades are sticking, give them a very light, quick, spray with some spray cooking oil.
    • Storing - Rocky Road can be stored in an airtight container in the fridge for up to 1 month. 

    FAQs

    Why do you add coconut oil to the chocolate?

    Adding coconut oil to the chocolate is optional, but makes the rocky road easier to cut neatly when set. Remove Rocky Road from the fridge at least 30 minutes before cutting.

    Can I freeze popping candy rocky road?

    Absolutely! Wrap the rocky road in baking paper and place in a freezer-safe container. Freeze for up to 3 months.

    Ingredients

    • 500 g milk chocolate or dark chocolate
    • 20 g coconut oil optional (see notes)
    • 200 g marshmallows chopped
    • 100 g mini M&Ms
    • 4 x 7 g sachets popping candy see notes
    • 80 g gummi bears

    Instructions

    • Line the base and sides of an 18cm x 28cm baking tray with baking paper.
    • Place the chocolate and coconut oil (optional) into a heatproof, microwave-safe bowl.

    • Stir through the chopped marshmallows, mini M&Ms, popping candy and gummi bears (reserve a few M&Ms and gummi bears for decorating the top.
      If using a Thermomix: Mix for 5-10 seconds, Reverse, Speed 3 (using the spatula to help mix), or until completely combined. 
    • Spread the mixture into the prepared baking tray and decorate with the reserved gummi bears and mini M&Ms.
      Place in the fridge for 2 hours or until completely set.
    • Use a sharp knife to cut into pieces (if you are having trouble cutting the slice, run your knife under hot water and then dry completely before cutting - the heat will help to cut the slice evenly).
