Healthy Vegetable & Turkey Meatballs - Thermomix Method
These oven-baked Healthy Vegetable & Turkey Meatballs make a delicious midweek dinner or snack. Make a big batch and pop any leftovers into the freezer.

carrot (approx 120g)
zucchini (approx 200g)
olive oil spray
sesame seeds, for sprinkling
Preheat oven to 200 degrees celsius (fan-forced).
Line two baking trays with baking paper and set aside.
Place the carrot, zucchini and onion into the Thermomix bowl and chop on Speed 5, 10 seconds.
Place into a strainer and remove all excess liquid before placing back into the Thermomix bowl.
Add the turkey mince, breadcrumbs and egg and mix on Reverse Speed 3-4, 20 seconds.
Roll the mixture into tablespoon-sized balls and place onto the prepared trays.
Spray with olive oil cooking spray and sprinkle with sesame seeds.
Bake for 20 minutes or until cooked through.
These meatballs can be frozen after cooking.
