Zucchini Slice is certainly a favourite recipe here in Australia.
It's a savoury slice made from grated zucchini, eggs, cheese, bacon (or ham) and flour, which is then baked until golden on the top and moist in the centre (a bit like a cross between a quiche and a savoury muffin).
While zucchini slice is a very easy recipe to make the good old fashioned way with a bowl and a mixing spoon, it is SO much quicker and easier using a Thermomix machine!
The Thermomix will grate your vegetables and cheese, chop your bacon and mix together the entire slice batter... all in one bowl (and in less than 10 minutes!).

Everyone loves this easy Thermomix Zucchini Slice... here's why it's so popular:
- Budget-friendly - zucchini slice is made using pantry and fridge staples. Best made when zucchinis are in season (and extremely cheap!), this slice costs very little to make but goes such a long way.
- Serve warm or cold - while I prefer to eat zucchini slice warm with a spoonful of chutney or relish and a side salad, it is just as delicious served cold (which is a great option for lunch boxes).
- Fussy kid-approved - I have never known a kid to turn their nose up at zucchini slice (and I had a SUPER fussy toddler!!!). The grated cheese and bacon gives this mild flavoured slice a kid-friendly flavour boost.
- Freezer-friendly - I like to make a double batch and freeze the leftovers. Thermomix zucchini slice can be stored in the freezer for up to 3 months (either as as entire slice or cut into individual pieces).
- One bowl - the Thermomix really is a dream machine when it comes to making zucchini slice! The entire batter is prepared in the Thermomix - meaning that you only have one bowl to wash afterwards!
Equipment Required
The Thermomix makes preparing zucchini slice an absolute breeze!
Not only will it grate your onion, zucchini and cheese, it will also chop your bacon AND mix the entire batter together - how amazing is that!
This recipe is suitable for use in any of the Thermomix models (TM31, TM5 and TM6) or any other Thermal cooker.
What You Need
Thermomix Zucchini Slice is made using basic ingredients that you may already have at home!

- Cheese - the grated cheese gives this zucchini slice a BIG flavour boost! I recommmend using a cheddar or tasty cheese.
- Zucchini - also known as courgettes. Unlike many recipes that use grated zucchini, there's NO need to strain the zucchini as it gives the savoury slice a deliciously moist texture in the middle.
- Onion - use a medium brown onion.
- Bacon - alternatively you can substitute the bacon for ham. For a vegetarian option, you can omit the bacon entirely.
- Eggs - use large eggs at room temperature (approximately 60g per egg).
- Self-raising flour - you can use store-bought self raising flour or make your own self-raising flour from scratch using plain (all purpose) flour and baking powder.
- Vegetable oil - this is a mild flavoured oil that gives the slice it's beautiful and moist texture. Unlike olive oil which is not suitable for this recipe due to it's strong over-powering flavour, vegetable oil perfectly complements this savoury slice. Alternatively, you can use canola oil in place of the vegetable oil.
- Salt & pepper - to taste.
Step By Step Instructions
Just a couple of simple steps are needed to make Thermomix Zucchini Slice!

Step 1 - Grate The Cheese
Place the cheese (cut into cubes) into the Thermomix bowl and mix until finely grated. Set aside.
Step 2 - Grate The Vegetables
Place the halved onion and roughly chopped zucchini into the Thermomix bowl. Mix until grated and no large chunks remain.
Step 3 - Chop The Bacon
Add the bacon and mix until chopped.
Step 4 - Mix The Batter
Add all of the remaining ingredients and mix until well combined.
Note: you may need to scrape down the sides of the bowl with a spatula between each step.
Step 5 - Bake
Pour the batter into a greased 20cm x 30cm rectangular baking dish and bake in a preheated oven for 30-40 minutes or until cooked through when tested with a skewer (see my Expert Tips below for more info).
Serving Suggestions
- Thermomix Zucchini Slice is absolutely delicious served on it's own... or you can take it up a notch by serving it with a tasty side salad.
- This slice can be eaten hot or cold - making it a great lunchbox option!
- Add a spoonful of chutney or relish on the side or serve with freshly made bread rolls.

Not if it is cooked through thoroughly (see my tips below for testing if the slice is cooked). While the eggs give the zucchini slice an egg/quiche-like texture on the inside, the self-raising flour prevents it from becoming gluggy or mushy.
Expert Tips
- Test to see if the slice is cooked through by inserting a skewer into the centre - if the skewer comes out clean, it's ready. If it's 'eggy' or wet, it needs longer to bake.
- The top of the slice should be golden and firm while the inside will remain moist.
- If you find that your slice is over-browning, simply add a sheet of foil loosely over the top and continue cooking.
- Make this vegetarian by omitting the bacon.
- Store in an airtight container in the fridge for up to 5 days.
- Freeze in an airtight container for up to 3 months, either as a whole, or wrapped in individual pieces. Allow to defrost before consuming cold or warmed up.

Thermomix Zucchini Slice
Ingredients
- 100 g cheese roughly chopped (cheddar or tasty)
- 375 g zucchini roughly chopped
- 1 onion halved
- 150 g bacon roughly chopped
- 5 eggs room temperature
- 150 g self-raising flour
- 60 g vegetable oil
- salt and pepper to taste
Instructions
- Preheat the oven to 180 degrees celsius (fan forced).
- Lightly grease a 20cm x 30cm baking dish and set aside.
- Place the cheese into the Thermomix bowl and grate for 5 seconds, Speed 8. Set aside in a separate bowl.
- Place the zucchini and onion into the Thermomix bowl and grate for 5 seconds, Speed 6.
- Add the bacon and grate for an additional 5 seconds, Speed 5.
- Add the eggs, self-raising flour, vegetable oil, grated cheese and salt and pepper. Mix for 10-15 seconds, Speed 4 (use the spatula to help mix).
- Pour the mixture into the prepared baking dish and cook for 30-40 minutes or until golden on top and cooked through when tested with a skewer.
