    This refreshing strawberry mojito recipe with white rum and soda is packed with fresh strawberries, lime and mint, and is an easy cocktail to enjoy all summer long!

    This strawberry mojito cocktail is fresh, fruity and with a touch of fizz.

    Like my other refreshing cocktails, such as Blue coconut rum cocktail, French Martini, Midori splice, Pornstar martini, and Vodka sunrise, this mojito is the perfect summer drink. And it's SO quick and easy to make!

    Serve this cocktail with homemade cheese stick crackers, guacamole, vegetable crudites and chips for a celebration, a girls night in - or a starter to a girls night out!

    What You Need 

    This strawberry mojito recipe is made with a handful of ingredients that are easily purchased from the supermarket and liquor store.

    • Strawberries - fresh strawberries!
    • Lime - I recommend using fresh lime juice in this recipe.
    • Fresh mint leaves - approx. 20-30 mint leaves.
    • Simple syrup - this is a sugar liquid and can be purchased from liquor stores such as Dan Murphy's or you can make your own - it's so easy!
    • White rum - you can use any brand of white rum you like. I generally use Bacardi. 
    • Soda water - or substitute with club soda, seltzer or sparking water (but note that sparkling water isn't quite as fizzy as soda water.)
    • Ice cubes - to make your strawberry mojito icy!

    Equipment Required 

    Just a few basics required to make this mojito with strawberries.

    • Knife - for chopping the strawberries and cutting the lime in half.
    • Spoon or metal straw - for muddling the strawberries.
    • 2 highball glasses - for serving.

    Step By Step Instructions 

    Have the most refreshingly fruity strawberry rum cocktail ready to drink in only 5 minutes!

    Finely dice the strawberries. 

    Finely diced strawberries and halved limes on a plate.

    Divide the strawberries between the serving glasses. 

    Squeeze the juice from ½ a lime into each glass. 

    Divide the mint leaves between each glass, and pour over the simple syrup.

    Use a spoon or metal straw to muddle the strawberries until slightly crushed.

    Fill the glasses to the top with ice cubes. Add the white rum and mix well, then top the glasses with soda water.

    Garnish your mojito's with fresh strawberries, and serve immediately.

    Expert Tips

    • Sugar syrup - using sugar liquid ensures that you don't get any crunchy sugar granules in your cocktail as the sugar has already been dissolved.
    • You can easily make your own sugar syrup too!
    • Quantities - this recipe can be doubled or tripled to make 4-6 cocktails. 
    • White rum - you can use any brand of white rum you like. I generally like to use Bacardi. 
    • Serving - serve this cocktail immediately after making.
    • Temperature - use chilled soda water and lots of ice cubes for the most refreshing strawberry mojito.

    Ingredients

    • 125 g strawberries finely diced
    • 1 lime halved
    • handful fresh mint leaves approx 20-30 leaves
    • 60 ml simple syrup see notes
    • ice cubes
    • 120 g white rum like Bacardi
    • soda water

    Instructions

    • Finely dice the strawberries.
    • Divide the strawberries between the serving glasses.
    • Squeeze juice of ½ a lime into each glass.
    • Divide the mint leaves between each glass.
      Pour over the simple syrup.
    • Use a spoon or metal straw to muddle the strawberries until slightly crushed (alternatively, you can process them in a food processor for a smoother result).
    • Fill the glasses to the top with ice cubes.
    • Add the white rum and mix well.
    • Top the glasses with soda water.
    • Garnish with fresh strawberries and extra mint leaves.
      Serve immediately.
    • Thermomix Instructions: Place the strawberries into the Thermomix bowl. Chop for 5 seconds, Speed 3. Add the lime and mint leaves and and mix for 20 seconds, Reverse, Speed 3. Add the simple syrup, white rum, soda water and ice and mix for 15 seconds, Reverse, Speed 4. Pour into serving glasses and garnish.
