I've taken the classic version and adapted it to the Thermomix (but don't worry... there's I've still included the conventional instructions too!).

What You Need
You'll need just 6 ingredients to make salsa guacamole!

- Avocados - use ripe avocados as they mash easily. You can test if an avocado is ripe by gently pressing on it. If it slightly squishes, then it's ripe. I recommend using 3 very large avocados or 4-5 small avocados to make guacamole.
- Onion - very finely dice the onion. You can use red onion or white onion for this recipe. Omit entirely, if preferred.
- Tomatoes - it's important to deseed the tomatoes before adding to the guacamole. Chop the tomatoes in half and then use a knife to remove and discard the seeds. Finely dice the skin and flesh of the tomatoes.
- Coriander (Cilantro) - this herb gives guacamole it's classic flavour. Finely chop the coriander before using.
- Lime Juice - use freshly squeezed lime juice for the best results. Alternatively, you can use bottled lime juice. Substitute with lemon juice if preferred.
- Sea Salt - For seasoning the dip - this really brings out the flavours!
- Optional (Chopped Jalapenos or Chili) - use finely chopped jalapenos or chilis if you'd like your dip to have some spice! Omit if serving to children or people sensitive to hot foods.

If preparing guacamole conventionally, you will need:
- A chopping board
- Knife
- Mixing Bowl
- Fork (for mashing)
If preparing guacamole in a Thermomix, you will need:
- Knife
- Thermomix (any model is suitable for use)
Step By Step Instructions
Making your own homemade guacamole recipe is as easy as 1.2... serve!

Step 1 - Mash The Avocados
Cut the avocados in half.
Remove the pip and the skin and place the avocado flesh into a bowl.
Mash with a fork.
Step 2 - Add The Seasonings
Halve and deseed the tomatoes and then finely chop.
Add the deseeded and chopped tomatoes, finely diced red onion, coriander, lime juice and sea salt.
Mix to combine.
Taste and add more salt/lime juice if needed.
If using a Thermomix: Place coriander and red onion into the Thermomix bowl and mix for 3 seconds, Speed 7. Add the deseeded and halved tomatoes and chop for 4 seconds, Speed 7. Scrape down the sides of the bowl. Add the avocados, lime juice and salt. Mix for 3-5 seconds, REVERSE, Speed 3.

- Avocados - choose ripe avocados as they are softer and easier to mash. You can test if a avocado is ripe by giving it a light squeeze. If it squishes slightly, then it's ripe!
- Avoid soggy guacamole by removing the seeds from the inside of the tomatoes and only using the skin and flesh.
- Add chopped jalapenos or chillis to give the guacamole some heat! Omit the peppers/chilli if serving to children or anyone who is sensitive to spice.
- For best results, prepare the guacamole and serve immediately.
- If preparing ahead of time, place the guacamole into a container and pour a thin layer of lime or lemon juice over the top of the guacamole. Cover with plastic wrap and press down onto the juice. Alternatively, store in an well-sealed airtight container.
- Store in the fridge for 3-4 days.
- Guacamole is not suitable for freezing.

Guacamole turns brown when exposed to oxygen. To stop it from turning brown, serve immediately, or if storing, pour a thin layer of lime or lemon juice over the top of the guacamole. Cover with plastic wrap and press down onto the juice.

Ingredients
