Divide the strawberries between the serving glasses.
Squeeze juice of ½ a lime into each glass.
Divide the mint leaves between each glass. Pour over the simple syrup.
Use a spoon or metal straw to muddle the strawberries until slightly crushed (alternatively, you can process them in a food processor for a smoother result).
Fill the glasses to the top with ice cubes.
Add the white rum and mix well.
Top the glasses with soda water.
Garnish with fresh strawberries and extra mint leaves. Serve immediately.
Thermomix Instructions: Place the strawberries into the Thermomix bowl. Chop for 5 seconds, Speed 3. Add the lime and mint leaves and and mix for 20 seconds, Reverse, Speed 3. Add the simple syrup, white rum, soda water and ice and mix for 15 seconds, Reverse, Speed 4. Pour into serving glasses and garnish.

RECIPE NOTES & TIPS
Simple syrup is a sugar liquid and can be purchased from liquor stores such as Dan Murphy's, or you can easily make your own.
This recipe can be doubled or tripled to make 4-6 cocktails.
You can use any brand of white rum you like. I generally use Bacardi.
