It's creamy, refreshing, and packed with coconut flavour - basically like a beach holiday in a glass!     This Blue Coconut Rum Cocktail is a vibrant twist on classic tropical drinks like a Blue Hawaiian, but with an extra creamy coconut finish. The combination of Malibu, vodka and blue curacao gives it that signature fruity kick, while coconut water and cream mellow everything out into a smooth, dreamy cocktail.

    Blue Coconut Rum Cocktail Ingredients

    These ingredients perfectly complement the vodka and Malibu, balancing the cocktail with a refreshing, creamy tropical finish with a kick!

    • Blue curacao - this is what gives the cocktail its vibrant blue colour and a subtle orange flavour (don't skip it!). It's actually made from the dried peel of a type of bitter orange.
    • Coconut cream - adds that rich, creamy texture (different to coconut milk - make sure you use cream for best results).
    • Coconut water - keeps the drink light and refreshing rather than overly heavy.

    Variations

    • Make it alcohol-free - skip the vodka and Malibu, and replace with extra coconut water and pineapple juice.
    • Stronger version - add a splash of white rum for an extra punch!
    • Frozen cocktail - add extra ice and blend until thick and slushy.
    • Dairy-free & gluten-free - coconut, coconut water and coconut cream are all naturally dairy-free and gluten-free, but always check labels on packaged products, as some brands can include additives or flavourings that may contain gluten.

    How To Make A Blue Coconut Rum Cocktail

    1. Decorate your glass (optional): Dip the rim into melted white chocolate, then into desiccated coconut. Chill in the fridge until set.
    1. Blend the base: Add vodka, Malibu, blue curacao, coconut water and ice into a blender. Mix on high until the ice is fully crushed and the mixture is smooth.
    1. Add the coconut cream: Pour in the coconut cream and blend briefly on low until just combined.
    1. Serve: Pour into your prepared glass and enjoy straight away.

    • Use crushed ice or small ice cubes for a smoother blend.
    • Don't over-blend after adding the coconut cream - it keeps the texture nice and thick.
    • Chill your glass beforehand for an extra refreshing drink.

    Ingredients

    • 55 g Vodka
    • 55 g Malibu white rum
    • 20 g Blue Curacao
    • 55 g coconut water
    • ¼ cup ice
    • 55 g coconut cream
    • melted white chocolate (optional - for decoration)
    • desiccated coconut (optional - for decoration)

    Instructions

    • If you'd like a coconut ring around your cocktail glass, dip the top into the melted white chocolate and then dip into the desiccated coconut. Place into the fridge until needed. 
    • Add all ingredients (except for the coconut cream) into a blender or Thermomix. 
    • Mix on high until the ice is completely crushed (if using a Thermomix, mix for 20 seconds on Speed 10). 
    • Add the coconut cream and mix on low until combined (if using a Thermomix, mix for 10 seconds on Speed 4). 
    • Pour into your cocktail glass and serve. 

    Notes
