- Blue curacao - this is what gives the cocktail its vibrant blue colour and a subtle orange flavour (don't skip it!). It's actually made from the dried peel of a type of bitter orange.
- Coconut cream - adds that rich, creamy texture (different to coconut milk - make sure you use cream for best results).
- Coconut water - keeps the drink light and refreshing rather than overly heavy.
Variations
- Make it alcohol-free - skip the vodka and Malibu, and replace with extra coconut water and pineapple juice.
- Stronger version - add a splash of white rum for an extra punch!
- Frozen cocktail - add extra ice and blend until thick and slushy.
- Dairy-free & gluten-free - coconut, coconut water and coconut cream are all naturally dairy-free and gluten-free, but always check labels on packaged products, as some brands can include additives or flavourings that may contain gluten.
