Rum Cocktail Ingredients
- 55g vodka
- 55g Malibu white rum
- 20g blue curaçao
- 55g coconut water
- ¼ cup ice
- 55g coconut cream
- Melted white chocolate and desiccated coconut, for the glass rim (optional)
Coconut cream is what gives this its signature thick, creamy texture - it's much richer than coconut milk, so don't swap it out if you can help it.
Variations
- Alcohol-free: swap the vodka and Malibu for extra coconut water and a splash of pineapple juice.
- Stronger: add an extra splash of white rum.
- Frozen: add extra ice and blend until slushy for a proper frozen cocktail.
- No blender: shake everything (minus the ice, add it after) in a cocktail shaker - it won't be quite as smooth and creamy, but it still works.
How To Make A Blue Coconut Rum Cocktail
- Step 1: Prepare the glass. Dip the rim of a martini or hurricane glass in melted white chocolate, then in desiccated coconut, and pop it in the fridge to set.
- Step 2: Blend the base. Add the vodka, Malibu, blue curaçao, coconut water and ice to a blender. Blend on high for around 20 seconds, until the ice is completely crushed.
- Step 3: Add the coconut cream. Pour in the coconut cream and blend briefly on low, just until it's combined - you don't want to overblend it.
- Step 4: Serve. Pour into your prepared glass and serve immediately, while it's still cold and creamy.
Team Thermomix? Add the vodka, Malibu, blue curaçao, coconut water and ice and mix for 20 seconds on Speed 10. Add the coconut cream and mix a further 10 seconds on Speed 4, then pour and serve.
Recipe Tips
- Chill your glass in the freezer for 10 minutes beforehand if you want it extra frosty.
- Don't skip crushing the ice properly - a smooth blend is what gives this its signature creamy texture.
- Storage: this one's best made fresh and served straight away - the texture won't hold once it's sat for a while. If you need to prep ahead, measure out the liquid ingredients and keep chilled, then blend with ice just before serving.

Ingredients
- 55 g Vodka
- 55 g Malibu white rum
- 20 g Blue Curacao
- 55 g coconut water

Instructions
- If you'd like a coconut ring around your cocktail glass, dip the top into the melted white chocolate and then dip into the desiccated coconut. Place into the fridge until needed.
