This did not disappoint. Made this for a game night and it was an absolute hit, all gone. I did find it very hard to cut even after leaving it out at room temperature, but I didn't have coconut oil. I used Turkish delight instead of raspberry lollies, will definitely make again.

Rocky Road Ingredients

- Clinkers are a hard lolly centre dipped in Cadbury milk chocolate, and they're the whole point of this recipe. Cut them in half before mixing them through, it's what gives you that stained-glass look once it's sliced. Can't get them? Chopped up Crunchie or Violet Crumble works as a swap, though it won't taste quite the same. (Fun fact: Clinkers actually vanished off supermarket shelves for a stretch a while back, after a TikTok trend had people biting into them blind to guess the colour inside.)
- I use milk chocolate for the classic version, but dark chocolate works if you want it less sweet. Stick to a good eating chocolate like Cadbury, Nestle or Lindt, the cheap cooking blocks don't set as firm or taste as good.
- Raspberry lollies are the little pink and white ones, not raspberry snakes. No raspberry lollies in the cupboard? Turkish delight or Jaffas both work well as a swap.
- The coconut oil is optional, but it's my number one tip for a cleaner cut. A splash stirred through the melted chocolate stops the rocky road setting rock hard, so your knife glides through instead of shattering it.
Variations
- Swap the raspberry lollies for Turkish delight. One of my readers, Lyndsie, does exactly this and says it's just as good.
- Add a bag of Jaffas for a chocolate-orange version, it's how a lot of Aussie mums make theirs at Christmas time.
- Toss in some salted peanuts and lightly toasted coconut for extra crunch, a couple of readers double up their batch with these mixed through.
- Go dark and swap the milk chocolate for dark chocolate if you want something less sweet and a bit more grown up.
- One reader now throws banana lollies into hers every single Christmas. Honestly, whatever's left in the lolly jar tends to work.
How To Make Clinkers Rocky Road
Four simple steps, and the hardest part is waiting for it to set.

- Step 1: Chop the Clinkers. Line an 18 x 28cm slice tin with baking paper. Cut the Clinkers in half with a sharp knife, this is what gives you that lolly-shop look once it's sliced.

- Step 2: Melt the chocolate. Place the chocolate and coconut oil into a microwave-safe bowl. Heat on 50% power, stirring every minute with a dry spoon, for 4-5 minutes or until smooth.

- Step 3: Mix through the add-ins. Stir the Clinkers, marshmallows and raspberry lollies through the melted chocolate until everything is well coated.

- Step 4: Set and slice. Spread the mixture into your prepared tin and refrigerate for at least 2 hours or until completely set. Sit it out of the fridge for 30 minutes before cutting into pieces.
Recipe Tips
- Storage: keep it in an airtight container in the fridge for up to 3 weeks, or freeze it for up to 3 months. I make a triple batch most Novembers and freeze it flat in snap-lock bags, ready to pull out for Christmas gifting.
- Let it sit out of the fridge for 30 minutes before cutting. I learned this one the hard way, cold rocky road cracks and crumbles instead of slicing clean.
- Run your knife under hot water and dry it before each cut for neat, lolly-shop-style squares.
- Use good quality chocolate. It's the main ingredient here, so a cheap cooking block will let the whole thing down.

Clinkers Rocky Road FAQs
Clinkers are a Cadbury lolly that's pretty much only sold in Australia and New Zealand. If you can't find them, chopped up Crunchie bars, Violet Crumble or even M&Ms will work, just pick something with a bit of crunch or colour running through it.
Up to 3 weeks in an airtight container in the fridge, or 3 months in the freezer.
This is almost always because it's come straight out of the fridge. Sit it on the bench for 30 minutes before slicing, and stir a little coconut oil through the melted chocolate next time, it makes a noticeable difference to how cleanly it cuts.
Yes, it's one of the best make-ahead treats around. I make mine weeks in advance and freeze it, then just thaw it in the fridge overnight before serving or gifting.
Yes, dark chocolate works well if you'd prefer it less sweet. The method stays exactly the same, just swap the chocolate over.

Ingredients
- 500 g milk chocolate or dark chocolate
- 30 g coconut oil optional
- 250 g Clinkers cut in half
- 100 g marshmallows
- 200 g raspberry lollies
Instructions
Conventional Method
- Line the base and sides of an 18 x 28cm rectangular slice tray with baking paper.
- Chop the Clinkers in half and set aside.
- Place the chocolate and coconut oil into a heatproof, microwave-safe bowl.
- Heat, uncovered, on 50% power, stirring every minute with a metal spoon, for 4-5 minutes or until the chocolate and coconut oil melts.
- Remove from the microwave and stir until smooth.
- Stir through the Clinkers, marshmallows and raspberry lollies.
- Spread the mixture into the prepared baking tray and place in the fridge for 2 hours or until completely set.
- Use a sharp knife to cut into slices (if you are having trouble cutting the slice, run your knife under hot water and then dry completely before cutting - the heat will help to cut the slice evenly).
Thermomix Method
- Line the base and sides of a 18 x 28cm rectangular slice tray with baking paper.
- Place the Clinkers into the Thermomix bowl and chop for 2-3 seconds, Speed 4 (or until roughly chopped). Set aside in a separate bowl.
- Place the chocolate and coconut oil into a clean and dry Thermomix bowl. Melt for 3-4 minutes, 50 degrees, Speed 2 or until melted.
- Add the marshmallows, chopped Clinkers, and raspberry lollies and mix for 5-10 seconds, Reverse, Speed 3 (using the spatula to help mix), or until completely combined.
- Spread the mixture into the prepared baking tray and place in the fridge for 2 hours or until completely set.
- Use a sharp knife to cut into slices (if you are having trouble cutting the slice, run your knife under hot water and then dry completely before cutting - the heat will help to cut the slice evenly).
Notes
- Choose a high quality chocolate for melting (I like to use Cadbury, Lindt or Nestle). The chocolate is the main ingredient in this recipe, so choosing a good one makes all the difference.
- Add a little coconut oil to your chocolate when melting it - this will help with cutting into neat slices.
- Cut the Clinkers into halves before mixing through the milk chocolate. This makes it much easier to cut and also gives a beautiful burst of colour.
- Melt the chocolate in the microwave on 50% power, stirring every 30 seconds with a dry metal spoon until the chocolate has just melted (see my tips here for perfectly melting chocolate).
- Remove the rocky road from the fridge at least 30 minutes before slicing - this will help it to stop cracking.
- Use a large sharp knife to cut the rocky road (or check out my top tips for cutting rocky road here).
- Our rocky road recipe can be made using a microwave, stove-top or Thermomix. If using a stove-top, melt the chocolate and coconut oil (optional) in a small bowl over a saucepan of boiling water (do not allow the water to enter the chocolate bowl).

Lollies are what we call candy in Australia. Clinkers are a type of candy but they're only available in Australia and New Zealand as far as I know!

Clinkers are a chocolate covered hard candy made by Cadbury. You can buy them in Australia and New Zealand - but I'm not sure where else. You could always substitute the Clinkers for any of your favourite chocolate covered lollies.
