These Smarties cookies are soft, chewy and packed with chocolate Smarties. Taking just 5 minutes to prepare, these cute cookies make a fun addition to lunch boxes, parties, bake sales and morning tea!

What You Need
A handful of basic pantry ingredients plus a packed of Smarties is all you need to make these colourful smarties cookies!

- Butter - I prefer to use unsalted butter and add a pinch of salt, however you can use salted butter if you prefer and just omit the pinch of salt. Use room temperature butter to make it easier to mix with the sugars.
- Caster sugar - also known as superfine sugar. Caster sugar dissolves easily when beaten with the butter, making it perfect for cookies.
- Brown sugar - adds extra flavour to the cookies as well as giving them a soft and chewy texture.
- Egg - I use large sized eggs, weighing approx 60g each.
- Vanilla extract - or vanilla essence.
- Salt - omit if using salted butter.
- Bicarbonate of soda - also known as baking soda.
- Plain flour - also known as all-purpose flour.
- Smarties - or you can use any other candy coated chocolate.
Equipment Required
You don't need any fancy equipment to make these fun cookies with Smarties!
- Large bowl, hand-held beaters or stand mixer - or Thermomix.
- Two large baking trays - lined with greaseproof paper.
- Oven - I use a fan forced oven. If you use a conventional oven, increase the temperature by 10-20 degrees Celsius.
Step By Step Instructions
This Smarties cookie recipe takes just 5 minutes to prepare and is all made in just one bowl!

Step 1 - Cream The Butter And Sugars
Preheat the oven and line two baking trays.
Beat the softened butter, caster sugar and brown sugar together in a large bowl until pale and creamy.
Step 2 - Add The Egg, Vanilla Extract And Salt
Add the egg and vanilla extract and beat until well combined. Add the salt.
Step 3 - Add The Dry Ingredients
Sift in the bicarb soda and plain flour, then lightly fold through the creamed mixture.
Step 4 - Add The Smarties
Lastly, stir through the Smarties.
Step 5 - Chill The Dough Then Roll Into Balls
Place the dough into the fridge to chill for 15 minutes.
Roll the chilled dough into balls and place onto the lined trays, leaving a gap in between the cookies to allow for a little spreading.
Step 6 - Bake
Bake in the preheated oven for 5 minutes then remove from the oven and decorate with extra Smarties. Place back into the oven and cook until lightly golden around the edges.
Cool slightly on the baking trays before transferring Smarties cookies to a wire rack to cool completely.

Smarties Cookies
Ingredients
- 150 g butter softened
- 80 g (⅓ cup) caster sugar
- 80 g (½ cup) brown sugar
- 1 egg room temperature
- 2 tsp vanilla extract or essence
- ¼ tsp salt
- ½ tsp bicarbonate of soda
- 225 g (1 ½ cups) plain flour
- 220 g Smarties plus extra to decorate
Instructions
- Preheat oven to 170 degrees celsius (fan-forced). Line two large baking trays with greaseproof paper and set aside.
- In a large bowl, beat the softened butter, caster sugar and brown sugar until pale and creamy.If using a Thermomix: Insert the Butterfly into the Thermomix bowl. Add the softened butter, caster sugar and brown sugar and mix for 20 seconds, Speed 4. Scrape down the sides of the bowl and mix for a further 40 seconds, Speed 4 (or until pale and creamy).
- Add the egg and vanilla extract and continue to beat until well combined. Add the salt.If using a Thermomix: Reduce to Speed 2 and with the butterfly still turning, add the egg and vanilla extract through the MC hole. Increase to Speed 4 for 20 seconds. Remove the butterfly.
- Sift the bicarb soda and plain flour over the top of the mixture and fold through.If using a Thermomix: Add the salt, bicarb soda and plain flour to the bowl. Mix for 10 seconds, Speed 4. Scrape down the sides of the bowl and repeat for a further 10 seconds.
- Add the Smarties and stir through.If using a Thermomix: Add the Smarties and mix for 10 seconds, Reverse, Speed 1 (using the spatula to help mix).
- Place the dough into the fridge to chill for 15 minutes (optional but recommended - to reduce spreading).
- Roll into heaped teaspoon sized balls and place onto the prepared trays (leave a gap between each cookie to allow for spreading).
- Cook for 5 minutes then remove from the oven and decorate with extra Smarties. Place back into the oven and cook for a further 3-5 minutes.
- Allow to cool slightly on the baking trays before transferring to a wire rack to cool completely.
