    When it comes to classic Christmas recipes, they don't get much more old-fashioned than this sweet White Christmas recipe made with dried fruit and nuts! 

    It makes the perfect Christmas food gift, or add it to a hamper with our Homemade Baileys Irish Cream, 3-Ingredient Christmas Cake, Christmas Fudge, and White Chocolate Rocky Road!

    Why You're Going To Love This Recipe

    1. It makes the perfect homemade foodie gift on its own or as part of a Christmas hamper.
    2. It takes just 10 minutes to make, which means there's no excuse not to whip up a batch (or five!!!) right now!
    3. Only 6 basic ingredients are needed - you might even have them sitting in your pantry
    4. NO COPHA!!! This recipe contains no copha/vegetable shortening!
    5. It can be made ahead of time and stored in the fridge for up to 1 week
    6. It's a super quick and easy recipe to whip up and have in the fridge for when unexpected visitors arrive!

    What You Need

    This Australian White Christmas recipe is a family favourite Christmas treat!

    The ingredients needed for White Christmas slice.

    To make this no bake slice, you will need:

    • white chocolate - because this is the main ingredient in this recipe, it's important to use a good quality white chocolate (such as Cadbury, Whittakers, Hershey's, Lindt or Nestle)... trust me - a good quality creamy white chocolate makes ALL the difference!! I recommend using cooking chocolate or chocolate melts as they melt the easiest.
    • dried cranberries - also known as craisins. These tart cranberries can be purchased from the dried fruit section of your supermarket.
    • toasted slivered almonds - you can buy raw slivered almonds and toast them in a frying pan over low heat on the stovetop, or you can purchase pre-toasted slivered almonds. Alternatively, you can substitute the almonds for crunchy pistachios.
    • sultanas
    • desiccated coconut - this is a fine coconut that can be purchased in packets from the supermarket.
    • crunchy rice bubbles - or you can use any brand of puffed rice, such as Rice Krispies.

    Equipment Required

    Delicious White Christmas requires NO fancy equipment!

    You will need:

    • a large mixing bowl - choose a heatproof bowl which you can melt the chocolate using a microwave
    • A microwave for melting the chocolate. Alternatively, you could use a double boiler on the stovetop or a Thermomix.
    • A prepared pan lined with parchment paper - I recommend using a 20cm X 28cm pan/slice tin.
    • Spoon for mixing - I recommend using a wooden spoon to gently mix the ingredients.
    • Large sharp knife - for cutting the slice once set.

    Step By Step Instructions

    It couldn't be easier to make this recipe...

    Simply melt and white chocolate and stir through the add-ins! Too easy, right!?

    Let me walk you through the simple steps:

    Step 1 - Melt The Chocolate

    You can do this step in the microwave or Thermomix (as per my instructions below) or in a double boiler on the stovetop.

    Step 2 - Add The Remaining Ingredients

    Add all the remaining ingredients and stir to combine until the dried fruits, nuts, and Rice Bubbles are coated with the melted chocolate.

    Step 3 - Press Into Tin

    Press the mixture firmly into the prepared baking tin and chill in the fridge.

    Recipe Tips

    Substitutions

    This is an incredibly versatile recipe, so you can change things up to suit your taste preference:

    • toasted slivered almonds can be substituted with pistachios, macadamias or roasted almonds
    • sultanas can be substituted with raisins (or left out if preferred)
    • dried cranberries and sultanas can be substituted with mixed dried fruit
    • you can use any brand of puffed rice in place of the Rice Bubbles

    Tips

    • you can melt the chocolate in the microwave (see my tips - how to melt chocolate in the microwave), in a Thermomix, or on a double boiler on the stovetop.
    • you can make this slice up to 1 week ahead of time and store it in an airtight container in the fridge.
    • use a good quality white chocolate to get the best possible tasting White Christmas recipe.
    • chill the slice in the fridge for a minimum of 3-4 hours (preferably overnight).
    • cut into slices using a small and sharp serrated knife or a very large sharp knife.

    FAQ

    Can I use dark or milk chocolate?

    While White Christmas is traditionally made with white chocolate, you can substitute it with milk or dark chocolate if you prefer.

    Can this be added to food hampers at Christmas?

    Absolutely! As long as you don't live in a super hot climate, my White Christmas recipe will be fine if stored at room temperature in a hamper. Wrap in clear cellophane wrap for a delicious Christmas bake treat!

    Can I make this nut-free?

    Yes absolutely! Simply omit the almonds and coconut and replace them with extra dried fruit.

    Can kids make this recipe?

    This is a fantastic recipe for kids to make! You will need to assist younger children with melting the chocolate, but apart from that, this is a great recipe for your little ones to make on their own!

    Can I use the mixture to make White Christmas trees?

    Yes - place a Christmas tree cookie cutter onto a baking paper-lined tray and press the mixture firmly into the cutter. Repeat this with the remaining mixture and then chill it in the fridge.

    Ingredients

    • 500 g white chocolate
    • 1 ½ cups (45g) Rice Bubbles or any puffed rice
    • 160 g dried cranberries (craisins)
    • 140 g sultanas
    • 120 g slivered almonds toasted
    • 1 cup (90g) desiccated coconut

    Instructions

    Conventional Method

    • Grease and line a 20cm x 28cm rectangular slice tin and set aside. 
    • Melt the white chocolate in a large microwave-safe bowl (on 50% power for 3-4 minutes or until melted - stir every 30 seconds). 
    • Add the Rice Bubbles, dried cranberries, sultanas, slivered almonds and desiccated coconut and stir to combine. 
    • Spoon into the prepared tin and press down firmly. 
    • Place into the fridge for 3-4 hours (preferably overnight) before cutting into slices. 
    • Store in an airtight container in the fridge for up to 1 week. 

    Thermomix Method

    • Grease and line a 20cm x 28cm rectangular slice tin and set aside. 
    • Place the white chocolate into a clean and dry Thermomix bowl. Melt for 4-5 minutes, 60 degrees, Speed 2. 
    • Add the Rice Bubbles, dried cranberries, sultanas, slivered almonds and desiccated coconut and mix on Reverse, Speed 2 until combined (you'll need to use the spatula to help mix). 
    • Spoon into the prepared tin and press down firmly. Place into the fridge for 3-4 hours (preferably overnight) before cutting into slices. 
    • Store in an airtight container in the fridge for up to 1 week.

      I have never been keen on the traditional White Christmas made with milk powder, copha and icing sugar so I was delighted to try this and it is fabulous. I only made half a batch as I was quite sure the temptation to eat the lot would be too much for me. I am gifting a lot of what I have made as it is so dangerous for my waistline. We are a Coeliac household so I made these with 'Freedom Gluten Free Rice Puffs'.
