    These old fashioned creamy shredded BBQ chicken sandwiches are packed with tender chicken, crunchy walnuts, celery and spring onions!

    Perfect for an easy lunch or for parties, they take just 15 minutes to make!

    BBQ shredded chicken sandwiches are the EASIEST sandwiches to make... and they're even simpler when using leftover bbq chicken - a great time saving trick!

    If you are a fan of chicken dinners, or love buying a BBQ chicken or rotisserie chicken for a fuss-free family dinner, these sandwiches are the perfect way to use up the leftover chicken!

    Leftover shredded chicken is mixed with a creamy sour cream and mayonnaise dressing to make the best chicken sandwich!

    Perfect for a quick and easy lunch, or serve alongside sausage rolls, bacon and cheese rolls and party pies for a delicious spread that is guaranteed to fill hungry bellies!

    What You Need

    These creamy shredded chicken sandwiches are made with a handful of basic ingredients - many of which you probably already have in your kitchen!

    • BBQ roast chicken - leftover shredded BBQ chicken, or substitute with leftover roast chicken or rotisserie chicken.
    • Celery - adds a refreshing crunch.
    • Spring onion - also known as scallions.
    • Walnuts - add a delicious crunch to the filling, however feel free to leave them out for a nut-free sandwich filling.
    • Whole egg mayonnaise - I recommend using a whole egg mayonnaise such as Hellman's or Heinz for the creamiest and richest taste. You can use a low fat version if you prefer.
    • Sour cream - this helps lighten the creamy sandwich filling.
    • Dijon mustard - adds extra flavour to the mayonnaise dressing.
    • Lemon juice or white wine vinegar - this helps balance out the rich creamy sandwich filling.
    • Salt and pepper - to season.
    • White bread - soft and fresh white bread is the classic bread for a chicken sandwich, but feel free to use wholegrain, seeded or any other favourite bread, if you prefer.
    • Softened butter - for spreading.

    Equipment Required

    • 2 forks or beaters - to shred the chicken.
    • Large bowl or Thermomix.

    Step By Step Instructions

    These quick and easy shredded bbq chicken sandwiches take just 15 minutes to prepare!

    Step 1 - Shred The Chicken

    Use two forks to shred the chicken as finely as possible. 

    TIP: You can also use a food processor or hand held beaters to shred the chicken.

    Step 2 - Make The Creamy Dressing

    Place the whole egg mayonnaise, sour cream, dijon mustard, lemon juice or white wine vinegar, salt and pepper in to a large bowl.

    Step 3 - Mix The Sandwich Filling

    Add the chopped celery, walnuts, spring onions and shredded chicken to the creamy mayonnaise mixture.

    Mix well. Taste and season with salt and pepper.

    Step 4 - Make The Sandwiches

    Butter the slices of bread.

    Divide the chicken mixture evenly between half of the slices. Top with the remaining bread slices. Cut sandwiches into quarters.

    Expert Tips

    • Shredding the chicken - you can use two forks to shred the chicken or use a food processor or hand held beaters to shred the chicken. 
    • White bread - traditionally chicken sandwiches are made with thinly sliced white bread, although you can use seeded, multi-grain or wholemeal, if you prefer. Ensure your bread is soft and fresh! You can also remove the crusts, if you like.
    • Seasoning - I recommend checking the chicken filling for seasoning once mixed, adding a little extra salt or pepper if required.
    • Serving - these shredded chicken sandwiches are best served immediately.
    • To make these sandwiches into a filling meal: serve with a side of crunchy potato wedges.

    Can I freeze these shredded chicken sandwiches?

    No, this recipe is not suitable for freezing.

    What can I serve with bbq chicken sandwiches?

    Often served at a party or gathering, potato chips, fries, sweet potato fries, coleslaw, grilled corn and a simple salad all make delicious sides to these moist chicken sandwiches.

    Can I make the filling ahead of time?

    The chicken filling can be prepared 1 day ahead of time and stored in an airtight container until needed.

    Ingredients

    • 500 g BBQ roast chicken
    • 1 celery stick finely diced
    • 2 spring onion stems finely diced
    • 65 g (½ cup) walnuts chopped
    • 125 g (½ cup) whole egg mayonnaise
    • 65 g (¼ cup) sour cream
    • 1 teaspoon dijon mustard
    • 2 teaspoon lemon juice or white wine vinegar
    • salt and pepper to season
    • 16 slices white bread thinly sliced
    • softened butter for spreading

    Instructions

    • Use two forks to shred the chicken as finely as possible.
      TIP: You can also use a food processor or hand held beaters to shred the chicken.
      If using a Thermomix: mix for 3 seconds, REVERSE, Speed 4.
    • Place the shredded chicken into a large bowl.
      Add the remaining ingredients (except for the bread and butter) and mix until combined.
      If using a Thermomix: Add the remaining ingredients and mix for 20 seconds, REVERSE, Speed 3 or until combined.
    • Spread the butter over the bread slices.
      Divide the chicken mixture evenly between half of the slices.
      Top with the remaining bread slices.
      Cut into quarters and serve.
