Removing The Liquid From Grated Zucchini

Sogginess is the biggest issue that people have when cooking zucchini fritters. Here’s how to avoid sogginess and cook the most delicious ‘crispy on the outside, soft on the inside’ fritters.

The most important thing is to strain all of the liquid from the zucchini.

  • Place the grated zucchini into a fine strainer
  • Sprinkle over 2 tsp of salt and mix through (the salt will draw the liquid out of the zucchini)
  • Place the strainer over a bowl or sink and allow to sit for 10 minutes
  • Use your hands to squeeze ALL of the liquid out of the zucchini (this will take a minute or two)
  • Discard the liquid and use the strained zucchini in the fritter mixture
