You know those nights when you just can’t be bothered cooking? Umm yep, they happen here ALL THE TIME!! I love baking, but when it comes to dinner, my cooking inspiration pretty much always falls by the wayside. So it makes perfect sense that these easy zucchini fritters are my saviour on those nights.

They take no time at all to prepare and then it’s just a matter of cooking them up in a frying pan… while scrolling mindlessly through Facebook on your phone (please tell me I’m not the only only who does that!?).

You’ll need to cook your zucchini fritters in batches, so make sure you’ve preheated your oven to keep them deliciously warm.

You can eat these zucchini fritters all on their own and they’re seriously good. But come on… who wants good when you can have great!? Add a dollop of sour cream and a drizzle of sweet chilli sauce to the top and OMG… bliss! Just bliss!!

This is also a really great recipe for using up zucchinis. If you have your own vegetable garden and grow zucchinis you’ll totally know what I mean. I swear one day you have no zucchinis at all and then the next day your garden is overflowing with the hugest zucchinis ever. What is with that!!?? Why can’t they just be a nice normal size??

Oh and if you want to boost the veggie factor, you can always add in a tin of corn as well. Zucchini and corn go together as beautifully as strawberries and cream… or milk and cookies. You get what I mean, right?

Ingredients

  • 400 g zucchini approx 3-4, grated
  • 1 tsp salt
  • 70 g (1/2 cup) self raising flour
  • 40 g (1/2 cup) parmesan finely grated
  • 1 egg whisked
  • 2 tsp minced garlic optional
  • Salt and pepper to season
  • 2 tbs olive oil

Instructions

  • Place grated zucchini into a colander and add the salt. Mix around.
  • Leave for 10 minutes (this will help the liquid to come out) then squeeze out all of the excess liquid (it's really important to get it all out!).
  • Place the zucchini into a bowl.
  • Add the self-raising flour, parmesan, egg, garlic and season with salt and pepper.
  • Stir until well combined.
  • Heat 1 tbs of the oil in a frying pan over medium-high heat.
  • Place tablespoons of the mixture into the pan.
  • Flatten out with a spatula and cook for 2 minutes on either side or until golden and crispy.
  • Repeat with remaining mixture.
  • *You might like to place the cooked fritters into an oven set to 120 degrees celsius while you cook the following batches.

Ingredients

  • Grate by pressing Turbo 5-10 times or until coarsely grated.
  • Place grated zucchini into a colander and add the salt. Mix around.
  • Leave for 10 minutes (this will help the liquid to come out) then squeeze out all of the excess liquid (it's really important to get it all out!).
  • Place the parmesan cheese into the TM bowl and grate on Speed 10 for 10 seconds.
  • Add the self-raising flour, egg, garlic, zucchini and season with salt and pepper.
  • Mix on Reverse, Speed 5 for 10 seconds.
  • Scrape down the sides of the bowl and repeat for a further 5 seconds.
  • Heat 1 tbs of the oil in a frying pan over medium-high heat.
  • Place tablespoons of the mixture into the pan.
  • Flatten out with a spatula and cook for 2 minutes on either side or until golden and crispy.
  • Repeat with remaining mixture.
  • *You might like to place the cooked fritters into an oven set to 120 degrees celsius while you cook the following batches.

These fritters look like they would make the perfect quick brunch, Lucy! I love that you have made them thin and crispy rather than thicker (as I find they can be a little mushy in the middle like that!). I can see these going down very well with some smoked salmon and a green salad on the side!!
