    Rich, decadent and ULTRA FUDGY Thermomix Brownies take just 5 minutes to prepare! Made from 6 basic ingredients, this is sure to become your go-to Thermomix brownie recipe in no time!

    It's no secret that I absolutely LOVE my Thermomix... and of course, I love it the most when I'm making deliciously sweet slices, cookies and desserts!

    These Thermomix Brownies are ridiculously fudgy on the inside and have that perfect flaky crust on the top.

    They are simply the BEST Thermomix Brownies you'll ever make!

    Why You're Going To Love This Recipe

    The Thermomix makes preparing these brownies an absolute breeze:

    • 5 minutes prep time - using the Thermomix to prepare these brownies means you have virtually NO dishes (just 1 Thermomix bowl and a spatula) and it takes less than 5 minutes. AMAZING, right!?
    • 6 basic ingredients - forget about making an extra trip to the supermarket! These Thermomix Brownies are made from: butter, caster sugar, cocoa powder, vanilla extract, eggs and plain flour.
    • Budget friendly - all of the ingredients in these rich and decadent brownies are pantry and fridge staples... meaning they're very easy on the budget too!
    • SUPER fudgy & rich - I promise that you will not get brownies that are fudgier than these!!! With no rising agents at all, it's just pure, delicious chocolatey goodness.
    • Freezer friendly - while these brownies will last for up to 4 days in an airtight container at room temperature, you can, of course, freeze them for up to 3 months (but they definitely won't make it to the freezing stage!)

    What You Need

    Just 6 basic ingredients that you probably already have in your pantry or fridge!

    The ingredients for brownies made in the Thermomix.
    • Butter - you can use either salted or unsalted butter in this recipe.
    • Caster sugar - this is a superfine white sugar. If you don't have caster sugar, you can use place regular white sugar into the Thermomix bowl and mix for 10 seconds on Speed 5. Use as a replacement for caster sugar.
    • Cocoa powder - use unsweetened cocoa powder such as Nestle or Cadbury brand.
    • Eggs - use large eggs (approx 60g each). Ensure the eggs are at room temperature before using.
    • Vanilla extract - or substitute for vanilla essence or vanilla paste.
    • Plain flour - also known as all-purpose flour. This type of flour has no rising agents which means that the brownies will stay deliciously rich and dense.

    Equipment Required

    This one-bowl recipe makes the most of the functions of the Thermomix!

    Thermomix - forget about using a million different kitchen appliances... the Thermomix is all you need to make these sweet and simple brownies. My recipe is suitable for use in all Thermomix models.

    Oven - bake the brownies in the oven on 160 degrees celsius fan-forced (320 degrees fahrenheit) or 170 degrees celsius conventional oven (340 degrees fahrenheit).

    Step By Step Instructions

    5 minutes and 5 easy steps... making Thermomix Brownies couldn't be any easier!

    Step 1 - Melt Butter

    Place the chopped butter into the Thermomix bowl.

    Cook for 3 minutes, 80 degrees, Speed 2 or until completely melted.

    Step 2 - Add Caster Sugar & Cocoa Powder

    Add the caster sugar and cocoa powder to the melted butter.

    Mix for 20 seconds, Speed 4 (scraping the sides of the bowl down after 10 seconds).

    NOTE: The mixture will be very thick and grainy at this stage.

    Step 3 - Mix Through Eggs & Vanilla

    Crack the eggs into the Thermomix bowl and add the vanilla extract.

    Mix on REVERSE, Speed 4, 10 seconds. Scrape down the sides of the bowl.

    NOTE: At this stage the mixture will be glossy and smooth.

    Step 4 - Add Flour

    Add the plain flour to the mixture.

    Mix for 10 seconds on Speed 4, (scrape down the sides of the bowl down after 5 seconds).

    NOTE: The mixture will be thick, smooth and glossy.

    Step 5 - Bake

    Pour the Thermomix brownie mixture into a greased and lined 20cm x 20cm (8 x 8 inch) square baking tin.

    Cook in a fan-forced oven preheated to 160 degrees celsius (320 degrees fahrenheit) for 25-30 minutes or until flaky on the top and only just set in the middle.

    TIP: Do NOT overcook the brownies or they will lose their rich, decadent and fudgy texture.

    FAQ's

    Do I need a Thermomix machine for this recipe?

    Yes! But if you don't have a Thermomix machine, you can find my conventional brownie recipe here.

    How can I make regular white sugar into caster sugar?

    If you don't have caster sugar, you can use place regular white sugar into the Thermomix bowl and mix for 10 seconds on Speed 5. Use as a replacement for caster sugar.

    How many calories are in a piece of brownie?

    A regular sized piece of brownie contains approximately 140 calories.

    Can I use chocolate in this recipe?

    There's absolutely NO need to add chocolate to this recipe! The flavour is SO ridiculously rich and chocolatey as it is!

    Why is there no rising agent in this recipe?

    To keep these Thermomix brownies mega dense and rich, we use only plain flour and NO rising agent. By using self-raising flour, or by adding baking powder or bi-carbonate soda, this would result in a cake-like chocolate texture... not decadent, dense and fudgy brownies!

    Expert Tips

    Prepare the baking tin

    To ensure easy removal of the brownie after cooking, grease and line a 20cm x 20cm (8 x 8 inches) baking tin with baking paper.

    Don't overcook the brownies

    It's important to cook the brownies just until the top is flaky and the centre of the brownies are cooked through when tested with a skewer inserted in the middle. The skewer will come out with a smear of brownie on it when it's cooked. Over-baking the brownies will take away their fudginess!

    Storing

    Store in an airtight container at room temperature for up to 4 days. Do not store brownies in the fridge as they will dry out.

    Freezing

    Brownies can be frozen for up to 3 months. Allow to defrost in the fridge before consuming.

    Ingredients

    • 150 g butter
    • 275 g caster sugar see notes
    • 75 g cocoa powder
    • 2 tsp vanilla extract
    • 3 eggs room temperature
    • 75 g plain flour

    Instructions

    • Preheat oven to 160 degrees celsius fan-forced (320 degrees fahreinheit).
      Line a 20cm x 20 cm square baking tin (8 x 8 inches) with baking paper. Set aside.
    • Place the butter into the Thermomix bowl. Melt for 3 minutes on 80 degrees, Speed 2.
    • Add the caster sugar and cocoa powder and mix for 10 seconds on Speed 4. Scrape down the sides of the bowl and repeat for a further 10 seconds. Allow to cool slightly.
    • Add the vanilla extract and the eggs and mix for 10 seconds on Reverse, Speed 4. Scrape down the sides and repeat.
    • Add the plain flour and mix for 5 seconds on Speed 4. Scrape the sides of the bowl and repeat.
    • Pour the brownie mixture into the prepared tin and bake for 25-30 minutes or until cooked through. Leave in the tin to cool completely.
