What You Need
You only need 4 ingredients to make butterscotch confetti squares!

- Chocolate - you can use butterscotch chocolate (my favourite!), Caramilk or white chocolate.
- Peanut butter - you can use either smooth or crunchy peanut butter. I recommend using store bought peanut butter rather than homemade peanut butter.
- Butter - unsalted butter or salted butter, either is fine to use.
- Mini marshmallows - these are easy to find at your local supermarket, usually in the baking section. Rainbow mini marshmallows are really pretty to use in this slice, but you can also use pink and white mini marshmallows. If you cannot find mini marshamallows, you could always cut up regular pink and white ones.
Equipment Required
You don't need any fancy equipment to make these super fun marshmallow peanut butter squares, just:
- Heatproof bowl
- Microwave, saucepan, or Thermomix.
- 20cm x 20cm square tin lined with baking paper.
Step By Step Instructions
Making these delicious chocolate peanut butter marshmallow squares is as easy as 1...2...3!

Step 1 - Melt The Chocolate, Peanut Butter And Butter
Grease and line a square tin and set aside.
Place the chocolate, peanut butter and butter in a heatproof bowl.
Gently melt in the microwave or place on a pan of simmering water on the stove top, stirring until smooth. Leave to cool.
Step 2 - Add The Mini Marshmallows
Add the mini marshmallows to the cooled mixture.
Quickly stir until the marshmallows are thoroughly coated in the peanut butter and chocolate mixture.
Step 3 - Place In The Lined Tin
Spread the mixture very firmly into the prepared tin then place in the fridge to set for at least an hour.
Once set, cut in to squares and enjoy!
Expert Tips
- Peanut Butter - store-bought peanut butter works better in this recipe than homemade or natural peanut butter.
- Melting - you can melt the ingredients in the microwave, on the stove-top or in a Thermomix.
- Don't add the marshmallows to the hot chocolate butter mixture - allow it to cool, otherwise they will melt and you'll end up with a sticky mess!
- Setting time - leave in the fridge to set for a minimum of 1 hour.
- Cutting the slice - remove from the fridge 30 minutes before you want to cut the slice. Use a sharp knife to cut the room temperature slice. See my post for more tips to cut perfect slices.
- Storing - store in an airtight container in the fridge for up to 1 week.
FAQs
Yes! These peanut butter marshmallow squares can be frozen for up to a month. Wrap them well, and defrost in the refrigerator overnight.
If your squares are crumbly it is likely that you heated the chocolate, peanut butter and butter over a too high heat and the sugars crystallised, creating a crumbly texture.

Peanut Butter Marshmallow Squares
Ingredients
- 300 g chocolate butterscotch, Caramilk or white chocolate
- 250 g (1 cup) peanut butter smooth or crunchy
- 115 g (½ cup) butter
- 250 g mini marshmallows
Instructions
- Grease and line a 20cm x 20cm square tin with baking paper and set aside.
- Melt the chocolate, peanut butter and butter on low heat in a saucepan (or in 30 second bursts in the microwave on 50% power) for 4-5 minutes.Mix until smooth. Allow to cool (so that that marshmallows don't melt!)If using a Thermomix: Melt for 5 minutes, 60 degrees, Speed 2.
- Quickly, stir through the mini marshmallows. If using a Thermomix: Mix on Reverse for 15 seconds, Speed 2 or until completely combined.
- Spread the mixture very firmly into the prepared tin.
