60 Second Microwave Chocolate Brownies

You know the feeling when it’s really late at night and you start craving a deliciously yummy dessert? Of course you know that feeling! Everyone does, right!? Well these 60 Second Microwave Chocolate Brownies are just what you need on those nights. Just think… you can totally be eating a beautifully rich and dense brownie in 60 SECONDS!!! How awesome (and dangerous!!) is that!

This brownie is enough to satisfy your sweet little cravings, but without going totally overboard… because they’re individual servings! Oh and did I mention that you cook these decadent brownies in the microwave? I told you that it was simple.

This is what I call the parents dessert. I’ve named it this because it can be made, eaten and all traces of it removed between the time that your kiddies have gone to bed and before they wake up. Win, win all round, right!? Hehehe.. I know, I know.. that’s a bit mean… but COME ON… we’re talking about the yummiest brownies here. There’s to be absolutely NO sharing.

Anyway, you can keep your brownies nice and simple, or you can get all fabulous and fill them with all sorts of yummy fillings. Think chopped up  Mars Bars, crushed Peppermint Crisp, caramel squares… the sky is the limit! Just pop them into the brownie batter before cooking. Yum, yum.

And because I don’t like to do things by halves, I always top my brownie with a big scoop of ice-cream and a drizzle of caramel sauce. You just can’t beat a warm chocolate brownie with ice-cream, can you? See, I told you that this would satisfy any late night sugar cravings, didn’t I!

  • 1/2 cup plain flour
  • 1/4 cup cocoa powder
  • 1/2 cup brown sugar
  • 75 g melted butter
  • 1/2 cup milk
  • ice-cream to serve
  • caramel sauce to drizzle, optional


  • Sift the plain, cocoa powder and brown sugar into a bowl.
  • Add the melted butter and milk. Mix together.
  • Divide the mixture between three microwave-safe ramekins.
  • Place them one at a time into the microwave.
  • Cook for 1 minute on 70% power (800 watts). Check after 30 seconds. 
  • Take out of the microwave and top with a scoop of ice-cream.
  • Repeat with the remaining two ramekins. 


Cooking time will very much depend on your microwave.
Cook each brownie one at a time and check after 30 seconds.
