    A quick and easy 10 minute no-bake slice inspired by the classic Mars Bar Slice... but with the addition of crunchy Coco Pops!!

    I'm absolutely OBSESSED with this Mars Bar Coco Pop slice at the moment, it's quick and easy to make in just one bowl, and the chewy yet crunchy caramel and chocolate base with little chunks of Mars Bar throughout is simply delicious!

    Mars Bars are always such a popular chocolate bar, and I love to include them in recipes like my rich and fudgy Mars Bar Brownie that can easily double as a dessert. Or my Mars Bar cheesecake that is literally dripping with caramel sauce, totally over the top and decadent!

    But similar to my 10 minute Mars Bar slice made with Rice Bubbles, this no-bake slice swaps the Rice Bubbles for Coco Pops for an extra hit of chocolatey goodness!

    Why You're Going To Love This Recipe

    • Big flavour hit! - with chunks of nougat and caramel throughout, the crunch of chocolate Coco Pops and a milk chocolate topping, who can resist a wee bite?!
    • Quick and easy - this slice requires only one bowl and no baking time. It takes only 10 minutes to mix, then simply pop it into the fridge to chill.
    • Kids favourite - encourage the kids to help in the kitchen with a recipe they will love and be delighted to pop in their lunch boxes or share at a party.
    • Bake sales and school fetes - chocolate slices are always the first to be sold out!
    • Make ahead of time - this slice keeps well in a container for up to a week, or you can freeze some for up to 1 month (if it doesn't disappear first!)
    • Conventional and Thermomix - I have included instructions for both methods in the recipe card below.

    What You Need

    There's only 6 ingredients in this no-bake slice, so grab a couple of Mars Bars and some chocolate melts - you probably already have the rest!

    • Butter - you can use either salted or unsalted butter in this recipe.
    • Mars Bars - chopped into chunks. Mars Bars are made with layers of nougat and caramel then coated in milk chocolate, similar to a Titan Bar if you shop at Aldi.
    • Golden syrup - is a common baking ingredient in Australia and New Zealand. If you can’t buy golden syrup, replace the golden syrup with corn syrup, honey or maple syrup. 
    • Coco Pops - known as Coco Krispies in the US. Similar to Rice Bubbles only the puffed rice is chocolate flavoured in Coco Pops.
    • Milk chocolate - choose a good quality cooking chocolate as it will melt easily when heated. I generally use Cadbury or Nestle cooking chocolate or melts.
    • Coconut oil or vegetable oil - this is an optional step but by adding coconut oil or vegetable oil to the melted chocolate, it will make the chocolate easier to cut once the milk chocolate layer has set.

    Equipment Required

    There's little baking equipment required for this sweet slice - not even an oven!

    • Knife - to chop the Mars Bars into chunks.
    • Large microwave safe bowls and microwave - Coco Pop Mars Bar slice is all mixed together in one bowl, and the milk chocolate is easiest melted in the microwave too. Alternatively, you can use a saucepan on the stovetop, or a Thermomix.
    • Rectangular slice tin - approximately 18cm x 22cm, greased and baking paper lined.

    Step By Step Instructions

    Only a few simple steps to this café slice - just melt, mix, top and chill, an ideal recipe for kids to help with.

    Step 1 - Melt

    Grease and line a 18cm x 22cm rectangular slice tin with baking paper and set this aside. 

    Melt the butter, 100g (two thirds) of the Mars Bars and the golden syrup in a large microwave safe bowl on 50% power in 30 second bursts in the microwave, stirring each 30 seconds. Mix until the butter and golden syrup are smooth.

    Please note: The Mars Bars will not completely melt, some chunks will remain and that's perfectly fine.

    Alternatively, you can melt this on a low heat in a large saucepan on the stove top.

    Step 2 - Mix

    Add the Coco Pops to the melted mixture.

    Add the remaining chopped Mars Bar, then mix the Coco Pops and Mars Bar chunks through to combine.

    All the base ingredients mixed together in a bowl.

    Press the mixture very firmly into the prepared tin.

    Step 3 - Melt The Chocolate

    Place the milk chocolate and coconut oil or vegetable oil in a heatproof bowl. Microwave on 50% power for 3 minutes, or until just melted, stirring every 30 seconds with a metal spoon. Stir until the milk chocolate is smooth.

    Spread the melted chocolate over the slice and refrigerate until firm (a minimum of 3-4 hours - or best overnight).

    Remove slice from the refrigerator about 30 minutes before cutting into squares with a warm serrated knife. See tips.

    Expert Tips

    Here's a few tips to ensure your Mars Bar Coco Pop slice is the best!

    • Melting the butter, golden syrup and Mars Bars - you can melt the ingredients in the microwave, on the stove-top or in a Thermomix. Note: The Mars Bars will not melt completely but will still in small chunks – these chunks add to the taste experience! 
    • Golden syrup substitutions - ideally I recommend using golden syrup for the caramel-like flavour, however you can replace the golden syrup with corn syrup, honey or maple syrup, if you choose.
    • Make sure to use a fresh box of Coco Pops - this will ensure your slice is crispy and crunchy!
    • Press the mixture VERY firmly into a greased and lined baking tin - the mixture needs to be pressed down very firmly so that it doesn’t break apart when you cut it.
    • Adding coconut oil or vegetable oil to the milk chocolate - aids in a smoother melting process, and will help to stop the chocolate from cracking when sliced. 
    • Setting time - leave in the fridge to set for at least 3-4 hours (overnight is best). 
    • Cutting the slice - take the slice out of the fridge 30 minutes before cutting to allow the chocolate to soften slightly. Use a small serrated knife to cut through the chocolate layer and then through the rice bubbles layer. See my tips for cutting the perfect slices.
    • Storing - Coco Pop Mars Bar Slice can be stored in an airtight container in the fridge for up to 1 week. It can also be frozen for up to 1 month.

    FAQ's

    What is the best way to melt chocolate?

    Heating chocolate in the microwave in short (30 second) bursts, at half power (50%), and stirring each time, is the best way to melt chocolate so that you can control it, and ensure it heats only enough to produce a nice, smooth result.

    Alternatively, you can melt chocolate in a bowl over a saucepan of boiling water, but take care not to get any moisture in the bowl as this can cause the chocolate to 'seize', resulting in it becoming thick and grainy instead of being smooth and creamy.

    What's the history of the Mars Bar?

    The original Mars Bar was first developed in England in 1922 by a man called Forrest Mars, Senior, although now they are made in many countries across the world. In Australia, Mars Bars continue to be made in Ballarat, Victoria.

    Some countries have their own version of the Mars Bar, such as the US, where their version of a Mars Bar is called a Milky Way, in Canada it's the 3 Musketeers Bar, and even in Australia we have a similar version sold in Aldi stores which is the Titan Bar.

    Ingredients

    • 75 g (⅓ cup) butter
    • 150 g Mars Bars chopped
    • 20 g (1 tbs) golden syrup
    • 125 g (3 cups) Coco Pops
    • 250 g (1 ⅔ cups) milk chocolate
    • 20 g (1 tbs) coconut oil or vegetable oil (optional)

    Instructions

    Conventional Method

    • Grease and line a 18cm x 22cm rectangular slice tin with baking paper and set aside. 
    • Melt the butter, 100g (two thirds) of the Mars Bars and golden syrup in 30 second bursts in the microwave on 50% power (or on low heat in a saucepan).
      Mix until the butter and golden syrup are smooth.
      Please note: the Mars Bars will not completely melt.
      If using a Thermomix: Place 100g (two thirds) of the chopped Mars Bars, butter and golden syrup into the Thermomix bowl. Melt for 3 minutes on 60 degrees, Speed 2.
    • Stir through the Coco Pops and the remaining Mars Bar (chopped).
      If using a Thermomix: Add the Coco Pops and the remaining Mars Bar. Mix for 15 seconds on Reverse, Speed 2, or until completely combined.
    • Press mixture very firmly into the prepared tin. 
    • Place milk chocolate and coconut oil/vegetable oil in a heatproof bowl. Microwave on medium for 3 minutes, 50% power, or until just melted, stirring every 30 seconds with a metal spoon. Stir until smooth.
      If using a Thermomix: Place the milk chocolate into a clean and dry Thermomix bowl. Melt for 2-3 minutes on 50 degrees, Speed 3 (scraping down the sides of the bowl occasionally).
    • Spread over slice and refrigerate until firm (a minimum of 3-4 hours - or best overnight).
    • Remove slice from the refrigerator about 30 minutes before cutting into squares with a warm serrated knife.
