    Caramilk lovers, have I got a treat for you! The familiar Rice Bubble slice that you know and love has had an epic and utterly scrumptious caramel makeover! Featuring crunchy Rice Bubbles encased in a sweet and sticky base with a thick layer of Caramilk chocolate on top, it is quick, easy and oh-so-delicious. Caramilk Rice Bubble slice is sure to satisfy your caramel cravings! 

    No-bake slices are quick, easy and delicious! Whether it’s for a birthday party, school bake-sale or afternoon tea, they are always a crowd pleaser. So while we’re on the subject of easy treats, it doesn’t get any easier than this simple, one-bowl recipe made with just 5 ingredients.  

    Just like the easy Caramilk slice and Caramilk fudge, this slice can be whipped up in no time at all, with no oven time and minimal mess. Perfect for a sweet treat with a cuppa or a sneaky lunchbox treat, or any time!

    What You Need

    You won’t believe how easy it is to make this simple, no-bake slice! And all you need is a handful of simple, familiar pantry staples.

    • Rice Bubbles – add both crunch and chewiness to the slice. Also known as Rice Krispies, Rice Bubbles are cereal made from puffed white rice. If you would like your slice to be gluten-free, similar puffed rice products can be found in the health food section of supermarkets or in health food stores.
    • Golden Syrup – is used to add sweetness and a deep, buttery caramel flavour and also helps to hold the slice together. Golden syrup can be substituted for corn syrup, honey or maple syrup.
    • Caramilk Chocolate – is a blend of golden coloured, caramelised white chocolate made famous by Cadbury and has a delicious, creamy flavour that is impossible to resist! Caramilk is hugely popular in Australia and New Zealand, where it can be purchased from any major supermarket. If Caramilk chocolate isn't available in your location, you can use any variety of caramelised white chocolate like Nestle, or swap for white chocolate instead.
    • Butter – is used to hold the slice together. I recommend using real butter, rather than butter substitutes or margarine as they won’t hold the slice together as nicely. Salted or unsalted butter can be used.
    • Coconut oil – is added to the Caramilk chocolate top layer to soften it slightly, making it easier to slice without breaking. You can use equal quantities of a mild-flavoured oil like canola or vegetable, if preferred.

    Step By Step Instructions

    You won't believe just how easy this slice is to make! Only 5 simple ingredients and 10 minutes of hands-on time is required.

    Step 1 - Melt The Chocolate

    Place the Caramilk chocolate, butter and golden syrup in a microwave safe bowl (or in a saucepan) and gently melt together until smooth and combined.

    You can leave a few small chocolate lumps for a 'burst' of chocolate throughout, if you like.

    Step 2 - Make The Base

    Mix the Rice Bubbles into the melted chocolate mixture and stir to combine.

    Step 3 - Press Into Tin

    Press the slice mixture very firmly into the prepared tin. Use a round glass or jug to press the mixture down as hard as you can. You'll hear some of the rice bubbles crushing and this is totally fine!

    Step 4 - Add The Melted Chocolate

    This is the best part! To make the creamy, dreamy Caramilk topping layer, place the Caramilk chocolate and the coconut oil (or vegetable oil) in a microwave safe bowl.

    Microwave on medium power (50%) for 2-3 minutes, or until just melted, stirring in 30 second intervals with a metal spoon. Stir until smooth.

    Spread the chocolate mixture over the slice and refrigerate until firm (overnight is best, but a minimum of 3-4 hours is needed).

    Remove slice from the refrigerator about 30 minutes before cutting into squares with a warm, serrated knife.

    Expert Tips & FAQs

    Use a fresh box of Rice Bubbles or Rice Krispies.

    The end result will be much better. Using fresh Rice Bubbles will ensure that your slice is crispy and crunchy!

    Press the mixture into the tin VERY firmly.

    Use a greased and lined baking tin and press the mixture in very firmly. This will help the slice to hold together when slicing.

    Add a little coconut oil or vegetable oil to the chocolate topping.

    This will help keep the chocolate layer a little softer, which will stop it from cracking when sliced.

    Setting time.

    For best results, place the slice into the fridge to set overnight, if possible. Otherwise, a minimum of 3-4 hours is required for it to fully set.

    Cutting the slice.

    For clean, unbroken slices, take the slice out of the fridge for 30 minutes before cutting. This will allow the chocolate to soften slightly and make it easier to cut. Use a warm and dry serrated knife to cut through the chocolate layer and then push through the Rice Bubble layer.

    Storage.

    Caramilk Rice Bubble slice can be stored in an airtight container in the fridge for up to 1 week.

    Can I freeze Rice Bubble Slice?

    Yes! Wrap it whole, or wrap the individual slices and freeze it in an airtight container for up to 1 month. To thaw, place the slice in the fridge overnight, or place the slices at room temperature for 30-60 minutes.

    Ingredients

    For The Base

    • 75 g (⅓ cup) butter
    • 180 g Cadbury Caramilk chocolate chopped
    • 20 g (1 tbs) golden syrup
    • 90 g (3 cups) Rice Bubbles or any puffed rice

    For The Topping

    • 180 g Cadbury Caramilk chocolate
    • 20 g (1 tbs) coconut oil or mild vegetable oil (optional)

    Instructions

    Conventional Method

    • Grease and line a 18cm x 22cm rectangular slice tin with baking paper and set aside. 
    • Melt the butter, Caramilk chocolate and golden syrup on a microwave safe bowl on medium power (50%) in 30 second bursts in the microwave (or on low heat in a saucepan) until melted.
      Please note: leaving some small lumps of chocolate is completely fine.
    • Stir through the Rice Bubbles.
    • Press mixture very firmly into the prepared tin. Use a round glass or jug to press the mixture down as hard as you can (you'll hear some of the rice bubbles crushing).
    • To make the topping, place the Caramilk chocolate and coconut oil in a microwave safe bowl. Microwave on medium for 2-3 minutes at medium power (50%), or until just melted, stirring every 30 seconds with a metal spoon. Stir until smooth.
    • Spread over slice and refrigerate until firm (a minimum of 3-4 hours - or best overnight).
    • Remove slice from the refrigerator about 30 minutes before cutting into squares with a warm serrated knife.

    Thermomix Method

    • Grease and line a 18cm x 22cm rectangular slice tin with baking paper and set aside. 
    • Place the Caramilk chocolate, butter and golden syrup into the Thermomix bowl. Melt for 3 minutes, 60 degrees, Speed 2.
    • Add the Rice Bubbles and mix for 15 seconds, Reverse, Speed 2, or until completely combined.
    • Press mixture very firmly into the prepared tin. Use a round glass or jug to press the mixture down as hard as you can (you'll hear some of the rice bubbles crushing).
    • Place the Caramilk chocolate and coconut oil into a clean Thermomix bowl. Melt for 3 minutes, 50 degrees, Speed 3 or until melted (scraping down the sides of the bowl occasionally).
    • Spread over slice and refrigerate until firm (a minimum of 3-4 hours - or best overnight).
    • Remove slice from the refrigerator about 30 minutes before cutting into squares with a warm serrated knife.

    Notes

    RECIPE NOTES & TIPS
    • Use a fresh box of Rice bubbles or Rice Krispies - this will ensure your slice is crispy and crunchy!
    • Golden syrup substitutions - you can replace the golden syrup with corn syrup, honey or maple syrup. 
    • Press the mixture VERY firmly into a greased and lined baking tin -the mixture needs to be pressed down very firmly so that it doesn’t break apart you you cut it.
    • Adding coconut oil or vegetable oil to the Caramilk chocolate - will prevent the chocolate topping layer from cracking when sliced.
    • Setting time - leave in the fridge to set for a minimum of 3-4 hours (overnight is best).
    • Cutting the slice - take the slice out of the fridge 30 minutes before cutting to allow the chocolate to soften slightly. Use a small serrated knife to cut through the chocolate layer and then through the Rice Bubbles layer.
    • Storing the slice - Caramilk Rice Bubble Slice can be stored in an airtight container in the fridge for up to 1 week. It can also be frozen for up to 1 month.

      Absolutely delicious! Next time, I’ll chill it in the fridge first before adding the top layer, as mine sank right through. I’d also double the amount for the top layer.

      This was delicious! Only issue I found was that there wasn’t enough chocolate to cover the top of the slice. Some sunk through to the layers below too. Next time I’d double the chocolate topping. Definitely leave out of the fridge before you cut!
