My easy Corn Flake Slice recipe is made using just 7 basic ingredients (...and you might just already have them at home!)

- Corn Flakes - you can use Kellogg's branded Corn Flakes or any generic brand for this recipe.
- Rolled oats - you can use either regular old fashioned rolled oats or quick oats for this recipe. I like to use rolled oats as they give the slice a yummy chewy texture.
- Desiccated coconut - this is fine, dried coconut.
- Caster sugar - also known as superfine sugar, this variety of sugar is perfect for baking as it dissolves easily.
- Butter - use salted or unsalted butter. For a dairy-free alternative, substitute the butter for Nuttelex or a similar dairy-free spread.
- Honey - use regular honey or substitute for rice malt syrup, corn syrup or golden syrup.
- White chocolate (optional) - for drizzling over the top of the slice.
Equipment Required
This simple Honey Cornflake Slice is made using just a few basic kitchen equipment items.
You will need:
- Microwave (or alternatively a stove-top or Thermomix) - for melting the butter and honey.
- Large mixing bowl & spoon - for mixing the ingredients.
- Baking tin - a rectangular 18cm x 28cm (7 x 11 inch) baking tin.
- Greaseproof baking paper - for lining the tin.
- Oven - I specify fan-forced oven temperatures. If using a conventional oven, increase the temperature by 10 degrees.
Step By Step Instructions
Just 4 simple steps and 10 minutes prep time is all it takes to make crunchy corn flake slice!

Step 1 - Combine The Dry Ingredients
Place the Corn Flakes, rolled oats, coconut and caster sugar into a large bowl and mix to combine.
Set aside.
Step 2 - Melt The Wet Ingredients
Place the butter and honey into a microwave safe bowl. Melt on 50% power for 3 minutes or until melted.
Step 3 - Mix
Pour the wet mixture onto the dry mixture and mix until all ingredients are well combined.
Note: The dry mixture should be coated in the butter/honey.
Step 4 - Bake
Press the mixture firmly into the prepared baking tin.
Cook for 20 minutes or until just lightly golden on top.
Allow to cool and then drizzle over the melted white chocolate (optional).
Chill in the fridge before cutting into pieces.
Expert Tips
- Prepare the baking tin - ensure that you grease and then line a 18cm x 28cm (7 x 11 inch) baking tin with baking paper. The baking paper should overlap the sides of the tin to allow for easy removal of the slice for cutting.
- Honey substitute - you can substitute the honey for rice malt syrup, corn syrup or golden syrup.
- Cutting the slice - remove the chilled slice from the fridge. Using a large flat, sharp knife, cut the slice into small pieces.
- Storing - store the slice in an airtight container in the fridge for up to 1 week - this will keep the slice extra crunchy!
- Freezing - freeze the slice in an airtight container in for up to 3 months. Allow to defrost before consuming.

Ingredients
- 90 g (1 ½ cups) Cornflakes
- 145 g (1 ⅓ cups) rolled oats or quick oats
- 85 g (1 cup) desiccated coconut
- 165 g (¾ cup) caster sugar
- 150 g butter
- 60 g (3 tbsp) honey
- 100 g white chocolate melted, for decorating (optional)
Instructions
- Preheat oven to 160 degrees (fan-forced). Grease and line an 18cm x 28cm baking tin (7 x 11 inches) with baking paper and set aside.
- Place the Cornflakes, rolled oats, desiccated coconut and caster sugar into a large bowl. Stir to combine.
- In a separate bowl (microwave-safe), place the butter and honey. Melt in the microwave on 50% power for 3 minutes or until melted.If using a Thermomix: Place the butter (chopped) and honey into the Thermomix bowl. Melt for 3 minutes, 50 degrees, Speed 2.
- Pour the liquid over the dry ingredients and mix well to combine. If using a Thermomix: Add the Cornflakes, rolled oats, desiccated coconut and caster sugar to the bowl. Mix for 10 seconds, REVERSE, Speed 2 (using the spatula to help mix). Scrape down the sides and mix for a further 5 seconds, REVERSE, Speed 2 (or until combined).
- Press into the prepared baking tin and bake for 20 minutes or until lightly golden.
- Allow to cool in the tin. Drizzle over the melted white chocolate (optional).
- Chill in the fridge for a minimum of 1 hour before cutting into pieces.
