    Three squares of chocolate topped crunchy flapjacks.

    These Chocolate Flapjacks are crunchy on the outside, chewy in the middle, and finished with a slab of chocolate thick enough to leave fingerprints in.

    They're made from just 5 pantry staples and taste like a cross between my Anzac Slice and homemade Muesli Bars, but way more chocolatey.

    I get asked this one all the time, so let's clear it up: quick oats and rolled oats are not the same thing, and it actually matters here. For this recipe, we use quick oats as they hold together more firmly and give that classic chewy texture.

    If you're into this style of oat slice, my Peanut Butter Oatmeal Bars, Milo Slice and Nutella Crumble Bars all use the same trick.

    Why You're Going To Love This Recipe

    • Just 5 ingredients, and you've probably got most of them in the pantry already.
    • Ever had a slice that's crunchy on the outside and properly chewy in the middle? This is that slice.
    • Freezer-friendly, so there's always a stash ready for lunchboxes or unexpected visitors.
    • Conventional or Thermomix, both methods are written straight into the recipe card below.

    Flapjack Ingredients

    Six ingredients, most of which are already sitting in your pantry.

    • Golden syrup - this gives flapjacks their toffee-ish flavour and helps everything bind together. You can swap it 1:1 for honey or maple syrup in a pinch, but it won't taste quite the same, and the flapjack tends to turn out a touch softer since golden syrup is thicker.
    • Milk chocolate is my pick for the topping every time. I tried dark chocolate on these once and it fought with the caramel flavour instead of complementing it, all bitterness, no balance. White chocolate works too if that's more your family's thing.
    • Coconut oil (optional) stirred through the melted chocolate stops the topping cracking into shards the second you try to cut it. Easy to skip, but worth the 30 seconds if you've got some.

    Variations

    • Swap the quick oats for rolled oats if you want more chew and don't mind a slightly crumblier edge. My sister-in-law did this by accident once and we honestly didn't mind the result.
    • Dark or white chocolate: dark works if you like a bitter edge against the oats, white is sweeter and usually wins with the kids.
    • Stir a handful of sultanas, chopped nuts or seeds through with the oats for extra texture.
    • Sprinkle sea salt flakes over the chocolate before it sets if you want a salty-sweet version. Try it with dark chocolate for the full effect.

    How To Make Chocolate Flapjacks

    Basic ingredients, six easy steps, and about 10 minutes of actual hands-on work.

    1. Step 1: Preheat the oven and get everything in the bowl. Preheat the oven to 150°C (fan-forced) and line a 20cm square tin with baking paper. Place the butter, golden syrup, brown sugar and salt into a microwave-safe bowl or saucepan.

    1. Step 2: Melt it all together. Microwave on 50% power for about 4 minutes, stirring every minute, or melt gently in a saucepan on the stovetop until smooth and combined.

    1. Step 3: Add the oats. Tip in the quick oats and stir until every last bit is coated in that syrupy mixture.

    1. Step 4: Check it's evenly coated. Give it one more good stir, you want every oat glossy, with no dry patches left in the bowl.

    1. Step 5: Press into the tin and bake. Press the mixture firmly and evenly into the prepared tin, really put your back into it, then bake for 30 minutes until golden. It'll still feel soft, but firms up as it cools. Let it cool completely in the tin.

    1. Step 6: Add the chocolate topping. Melt the chocolate and coconut oil (if using), then pour over the completely cooled slice. Chill for at least 1 hour before cutting into squares.

    Recipe Tips

    • Don't pour the chocolate on while the flapjack is even slightly warm, it'll split and go patchy instead of setting smooth and glossy.
    • Want it chewier? Pull it out of the oven a few minutes early. Want more crunch? Give it the full 30 minutes.
    • A hot, dry knife makes cutting so much easier. Run it under hot water, dry it off, then cut, wiping and reheating between each slice for neat squares.
    • Press the mixture in firmly before baking. A half-hearted press is the number one reason flapjacks fall apart when you cut them.
    • Storage: keep in an airtight container in the fridge for up to 2 weeks. The cold keeps the chocolate top firm and the oats properly chewy.
    • Freezing: freeze in an airtight container for up to 3 months. They only need a few minutes at room temperature to defrost, so they're a genuinely fast lunchbox fix on a busy morning.

    Chocolate Flapjacks FAQs

    Can I make chocolate flapjacks ahead of time?

    Yes, they're actually a great make-ahead recipe. Bake and top them up to 3 days ahead and store in the fridge, the flavour and texture only get better once everything's had a chance to firm up.

    Should chocolate flapjacks be served warm or cold?

    Cold from the fridge is my favourite, that's when the chocolate top is firm and snaps properly. If you prefer a softer bite, let them sit at room temperature for half an hour or so before serving, the oats soften up a bit once they warm through.

    What can I use instead of golden syrup?

    Honey, maple syrup or corn syrup all work as a 1:1 swap. The flavour changes slightly and the texture can end up a touch softer since golden syrup is thicker than the others, but they'll still hold together and taste great.

    Why did my flapjack fall apart when I cut it?

    Two likely causes. Either rolled oats were used instead of quick oats (rolled oats give more chew but hold together less firmly), or the mixture wasn't pressed firmly enough into the tin before baking. Really lean on it with the back of a spoon or a flat-bottomed glass.

    How long do chocolate flapjacks keep, and can I freeze them?

    Up to 2 weeks in an airtight container in the fridge, or up to 3 months in the freezer. They defrost in just a few minutes at room temperature, which makes them one of the easiest lunchbox staples to keep stocked up.

    Ingredients

    Instructions

    • Preheat oven to 150 degrees celsius (fan-forced).
      Grease and line a 20cm (8 inch) square cake tin with baking paper. Set aside.

    • Add the quick oats and stir until all of the oats are coated.
      If using a Thermomix: Add the oats and mix for 10 seconds, REVERSE, Speed 2. Scrape down the sides and mix for a further 10 seconds.
    • Press the mixture firmly into the prepared baking tin.
    • Bake for 30 minutes or until golden on top.
      Note: the mixture will still be soft, however, it will firm up as it cools.
    • Allow to cool completely.
    • Place the milk chocolate and coconut oil (optional) into microwave-safe bowl. Melt for 3 minutes, 50% power or until just melted (stirring every 30 seconds).
      If using a Thermomix: Place the chocolate and coconut oil (optional) into a clean and dry Thermomix bowl. Melt for 3 minutes, 50 degrees, Speed 2.
    • Pour the melted chocolate over the slice. Place into the fridge for a minimum of 1 hour before cutting into pieces.

    RECIPE NOTES & TIPS
    • If using salted butter, omit the pinch of salt.
    • If you don't have a microwave, you can melt the butter, golden syrup, brown sugar, and salt in a saucepan over low heat.
    • For an extra chocolatey treat, add some chocolate chips to the mixture before pressing it into the tin.
    • These flapjacks are best stored in an airtight container in the fridge for up to 2 weeks.
    • Freeze for up to 3 months.
    • Add extra toppings like chopped nuts or shredded coconut.
    • You could also use dark chocolate or white chocolate in this recipe.

      You say see notes re: oats but there isn't a not entry. Guessing the note would way blitz the rolled oats to smaller/finer pieces to achieve quick oat consistency.

        I'm fairly certain quick oats are just normal oats cut smaller so if you put them in a food processor/tmx for a short time you'll have quick oats.
