This low carb Big Mac casserole is packed FULL of delicious flavours:

For The Casserole
- Beef mince - also known as ground beef.
- Onion - use either a regular brown or white onion (you only need ¼ of it).
- Cream cheese - you can use either regular Philly cream cheese or spreadable cream cheese.
- Grated cheese - I recommend using cheddar or tasty cheese. I prefer to freshly grate my own however you can also use store bought grated cheese.
- Dill cucumbers - also known as pickles or gherkins.
- Eggs - I recommend using large eggs (approximately 60g each).
- Cream - use cooking cream, light cream or regular heavy pouring cream (thickened cream).
For The Big Mac Style Sauce
- Mayonnaise - I find that whole egg mayo is best for this recipe. However, you can use light or regular mayonnaise if that's what you have on hand.
- Sweet pickle relish - or any pickle relish such as sweet mustard pickles.
- Mustard - use a yellow American mustard (not dijon).
- Spices - garlic powder, onion powder and paprika combine to make the perfect Big Mac sauce flavour combo!
- White vinegar - regular white vinegar or white wine vinegar can be used.
- Salt & pepper - just a pinch to season!
Equipment Required
To make this keto Big Mac Casserole, you'll need:
- Frying pan and stove-top;
- 18cm x 28cm (7 x 11 inch) baking dish;
- Oven.
Step By Step Instructions
It takes just 15 minutes and a few basic steps to prepare this family friendly beef casserole.

Step 1 - Prepare The Beef Base
In a large frying pan, brown the beef mince and then add the onion and cook until softened.
Stir through the cream cheese, ⅓ cup of the grated cheddar cheese and season with salt and pepper.
Stir until creamy and then spoon into the prepared baking dish.
Step 2 - Assemble The Casserole Layers
Add a layer of sliced dill cucumbers (also known as pickles or gherkins).
Whisk together the eggs and cream and pour over the pickles.
Sprinkle over the remaining grated cheese and bake for 20 minutes or until the casserole has cooked through well and the cheese is golden on top.
Step 3 - Make The Big Mac Sauce
Place all of the sauce ingredients into a small bowl and whisk together with a spoon.
Store the sauce in the fridge until ready to serve the casserole, then drizzle over the top, or let everyone help themselves to the burger sauce.
Serving Suggestions
I like to keep this casserole low-carb by serving it in a bowl with chopped lettuce (just like in a Big Mac burger!) and with the sauce drizzled over the top.
Some other serving suggestions include:
- Burger style - simply layer lettuce, a scoop of the casserole and the Big Mac sauce in between two burger bun halves.
- McDonalds style - add a side of french fries - just like at McDonalds! Or make your own homemade sweet potato chips or wedges, or mix things up with a side of potato gems or hash browns!
- In a wrap or as a taco filing - this casserole is super versatile and makes a delicious filling for your favourite wraps or tacos!

- You'll know that the Big Mac casserole is cooked through when the cheese is melted and golden and the egg is cooked in the centre of the dish.
- Freezing - freeze any leftovers in an airtight container for up to 3 months.
- Storing - store leftovers in an airtight container in the fridge for up to 2 days.
- Dill cucumbers are readily available in the jarred vegetable section of the supermarket (near the sun-dried tomatoes, capers etc). Dill cucumbers are also known as pickles or gherkins.
- You can use any variety of sweet pickle relish or sweet mustard pickles you like.
- If you don't want to make your own Big Mac burger sauce, you can use a store-bought copycat style special burger sauce (like this Heinz brand version).
- Serve like a Big Mac with lettuce... or add any of your other favourite salad ingredients (such as avocado, tomato, cucumber etc).

Big Mac Casserole
Ingredients
For The Casserole
- 500 g beef mince ground beef
- ¼ brown onion finely diced
- salt and pepper to season
- 100 g cream cheese softened to room temp
- 1 cup cheddar cheese grated
- ⅓ cup dill cucumbers sliced (also known as pickles or gherkins)
- 2 eggs
- ⅓ cup cream
Big Mac Sauce
- ½ cup mayonnaise preferably whole egg mayo
- ¼ cup sweet pickle relish or sweet mustard pickles
- 2 tsp yellow mustard American mustard (not Dijon)
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp paprika
- ¼ tsp white vinegar
- pinch of salt & pepper
To Serve
- 2 cups lettuce thinly sliced
Instructions
- Preheat the oven to 180 degrees celsius (fan forced).
- Brown the beef mince in a frying pan over high heat. Add the onion and cook until softened.
- Stir through the cream cheese, ⅓ cup of the grated cheese and season with salt and pepper. Continue stirring until melted. Place into an 18cm x 28cm baking tin.
- Place the sliced dill cucumbers (pickles) over the top of the mince.
- Whisk the eggs and cream together and pour over the pickles and mince.
- Sprinkle over the remaining ⅔ cup grated cheese.
- Bake for 20 minutes or until the cheese is golden and melted and the egg is cooked through.
- Meanwhile, prepare the Big Mac sauce by whisking all of the ingredients in a small bowl.
- To serve, place chopped lettuce into the base of each bowl, top with a large scoop of the Big Mac casserole and drizzle over the sauce (as much or little as you like).
