- Cucumber - 1 large cucumber (approx 250g), roughly chopped.
- Garlic - use a fresh garlic clove or 1 tsp minced store-bought garlic.
- Fresh herbs - use a combination of fresh dill and mint, or use just one or the other.
- Greek yoghurt - choose a thick, plain Greek yoghurt (such as Jalna or Tamar Valley).
- Olive oil - use a good quality olive oil.
- Lemon juice - fresh or bottled lemon juice can be used.

If you don't have a Thermomix machine, you can chop the cucumber, garlic and herbs with a knife and mix the ingredients together in a bowl.
You will also need some paper towel for straining the excess liquid from the cucumber mixture.

Step 1 - Chop The Cucumber, Garlic & Herbs
Place the roughly chopped cucumber, along with the garlic and herbs into the Thermomix bowl. Mix until finely chopped.
Step 2 - Strain The Excess Liquid
Spoon the cucumber mixture onto sheets of paper towel and squeeze out any excess liquid.
Return the mixture to the Thermomix bowl.
Step 3 - Mix The Remaining Ingredients
Add the greek yoghurt, olive oil, lemon juice and salt and mix until combined.
Serve immediately or chill until required.

Ingredients
- 250 g cucumber (1 large) roughly chopped

Instructions
