Welcome to Meal Plan #3! This week I've put together a delicious mix of family-friendly dinners to get you through the week - from a beautiful vegetarian pumpkin tart to a slow-cooked lamb shank Sunday, with plenty of easy weeknight favourites in between.
Plus I've added a cosy apple sponge pudding for dessert and two lunchbox-friendly snacks to keep everyone happy.

Monday: Caramelised Onion, Feta & Roast Pumpkin Tart
Golden puff pastry filled with roasted pumpkin, crumbled feta, caramelised onion and egg custard - a fuss-free vegetarian dinner baked until golden in just 40 minutes.

Tuesday: Chicken Rissoles
Chicken mince mixed with grated onion, carrot, zucchini and cheddar, pan-fried until golden and juicy - hidden-veggie rissoles on the table in just 20 minutes.

Wednesday: Oven Baked Chicken Parma Balls
Chicken meatballs baked until golden, smothered in a rich homemade tomato sauce and melted cheese - a kid-favourite oven bake ready in under an hour.

Thursday: Slow Cooker Lamb Shanks
Flour-dusted lamb shanks seared and slow-cooked for 8 hours in red wine, crushed tomatoes and rosemary until the meat falls off the bone.

Friday: Korean Fried Chicken Burger
Chicken thighs marinated in buttermilk, double-coated in a spiced cornflour mix and fried until ultra-crispy, served in a bun with Asian slaw and Korean gochujang mayo.

Saturday: Easy Fettuccine Carbonara
Four ingredients only - fettuccine, eggs, crispy bacon and parmesan - tossed off the heat for a silky, cream-free carbonara in just 25 minutes.

Sunday: Slow Cooker Chicken Noodle Soup
Chicken breast, carrot, celery, garlic and pasta slow-cooked all day in chicken stock - the ultimate nourishing winter soup with just 10 minutes of prep.

Dessert: Apple Sponge Pudding
Tender stewed apples topped with a light and fluffy vanilla Victoria sponge, baked golden - serve warm with ice cream, cream or custard for pure comfort.

Snack: Nutella Chocolate Chip Cookies
Soft and gooey inside, chewy on the outside, loaded with chocolate chips and swirled with Nutella - sprinkled with sea salt and ready in just 25 minutes.

Snack: Rice Bubble Marshmallow Slice
Just 3 ingredients - butter, marshmallows and rice bubbles - melted and pressed into a tin, then chilled until perfectly sweet, crunchy and lunchbox-ready.
