    Cheesy Egg and Bacon Tortilla Quiches

    Cheesy Egg and Bacon Tortilla Quiches are the easiest and tastiest snack that you can ask for!

    The creamy, cheesy filling is baked into tortilla boats, instead of pastry, making them a simple and tasty dinner with the addition of some side dishes.

    Quiche Lorraine, impossible quiche, vegetable frittata and savoury slice are all very versatile and can easily be a tasty snack or a light main meal.

    In summer, I like to serve them with a lovely fresh salad, like this Walnut, Parmesan, Pear and Rocket Salad, as a side dish. Or for a more substantial meal, I add a serve of vegetables, or even these crispy homemade baked potato wedges.

    • Simple! - you only need 5 ingredients, and they are super simple to make.
    • Quick and easy - this recipe requires very little preparation and can be ready in less than half an hour. Perfect for 'time poor' mums juggling everything!
    • Kid-friendly - the kids love these 'grab and go' snacks!
    • Freezer-friendly - egg and bacon tortilla quiches are great snacks to have made up and frozen, as they defrost and reheat beautifully.

    What You Need

    Note: Scroll to the recipe card at the bottom for the ingredients, quantities and full detailed method.

    • tortilla boats - I have used Old El Paso Stand 'n Stuff Mini Boats here. if you are making these for a main meal, you can use the regular size Stand 'n Stuff Tortilla Boats instead
    • thickened cream - this is known as heavy cream in the US, and is a full fat, rich cream, with an added thickening agent. It is not suitable to substitute with a light cream in recipes that specifically state 'thickened cream', as a 'light cream' will not give the same results.
    • eggs - when using eggs in a recipe, it is best to have them at room temperature before you start. I suggest cracking eggs into a separate bowl before adding them to other ingredients, just in case they are past their best or you have pieces of shell fall in.
    • bacon - there are a few different types of bacon cuts in Australia. I tend to use middle cut bacon which I find has more flavour, but whichever cut you prefer will be perfecly fine to use!
    • cheddar cheese - one of the most commonly bought blocks of cheese is Tasty cheese. This is an aged cheddar cheese which is perfect to grate for the quiche filling.

    Step By Step Instructions

    This is a really simple recipe, and your egg and bacon tortilla quiches will be ready to serve in under half an hour!

    Step 1 - Prepare The Bases

    Preheat your oven to 180 degrees celsius (fan forced).

    Separate the boats and arrange them on a baking tray.

    Step 2 - Prepare The Quiche Filling

    Dice and cook your bacon pieces until crispy.

    Whisk the cream and the eggs together in a large bowl.

    Step 3 - Fill Your Boats

    Divide the egg mixture between the tortilla boats.

    Sprinkle the cooked bacon pieces and grated cheese evenly among the boats.

    Step 4 - Bake

    Bake in a preheated oven for 10-15 minutes, or until golden and cooked through.

    Expert Tips and FAQ

    Do I have to cook the bacon first?

    Yes, the quiches are only baked for a short period of time, which is not long enough to cook the bacon.

    Can I use ham instead of bacon?

    You can definitely substitute ham for the bacon in this recipe, and this would save you some preparation time as well! I would recommend a thick sliced ham, rather than shaved, if possible.

    If I don't have, or want, to use cream, can it simply be left out?

    You can replace the cream with full cream milk, or leave it out if you like, however the texture of the filling will be slightly different.

    Storing

    Store any leftover tortilla quiches in an airtight container in the fridge for up to 3 days.

    Freezing

    Freeze the tortilla quiches in an airtight container for up to 3 months. Allow the tortilla quiches to defrost in the fridge before reheating.

    Ingredients

    • 1 packet Old El Paso Stand 'N Stuff Tortilla Boats (12 mini or 8 large)
    • 200 g bacon diced
    • 8 eggs room temperature
    • 180 g (¾ cup) thickened cream
    • 80 g (1 cup) cheddar or tasty cheese grated

    Instructions

    • Preheat oven to 180 degrees celsius (fan-forced).
    • Separate the tortilla boats and arrange them onto a baking tray. 
    • Saute diced bacon until crispy, set aside.
    • Whisk the eggs and cream together in a bowl.
    • Divide the mixture between the tortilla boats.
    • Sprinkle over the diced crispy bacon and grated cheese. 
    • Bake for 10-15 minutes or until golden and cooked through. 

    Notes

    Recipe Notes and Tips
    Cook the bacon - the bacon must be cooked first, as the quiches are only baked for a short period of time, which is not long enough to cook the bacon.
    Substitute ham for bacon - you can use ham instead o bacon and this would save you some preparation time as well! I would recommend a thick sliced ham, rather than shaved, if possible.
    Don't want to use cream? - if you don't have cream, or don't want to use it, you can replace it with full cream milk, or leave it out, however the texture of the filling will be slightly different.
    Storing & freezing - leftover Cheesy Egg and Bacon Tortilla Quiches can be stored in the fridge for up to 3 days or frozen in an airtight container for up to 3 months. Defrost in the fridge and reheat before consuming.
