    Zucchini fritters are an absolute favourite recipe in our house. Whether I'm making a batch for an easy weekend lunch, a lunchbox snack for my son or just to fill up the freezer, these healthy fritters are quick, easy and super yummy.

    • super quick - with just 10 minutes prep time, this is a perfect snack to whip up at the last minute
    • budget-friendly - made from just 4 basic ingredients, these zucchini fritters are super cheap to make (especially when zucchinis are in season!)

    • perfect for kids - these make a great healthy snack for kids and toddlers. Whether your little one is just starting on solids or you're packing school lunchboxes, these are always a hit!
    • freezer-friendly - make a double (or triple!) batch and freeze the leftovers. Allow to defrost and serve either at room temperature or warm in a frying pan or oven.

    4 Ingredient Healthy Fritters

    My zucchini fritters are made from just 4 basic ingredients (there's a very good chance you already have them at home!):

    • zucchini (also known as courgettes)
    • self-raising flour
    • parmesan cheese
    • egg

    If you like, you can also add 1 teaspoon of minced garlic for extra flavour.

    Removing The Liquid From Grated Zucchini

    Sogginess is the biggest issue that people have when cooking zucchini fritters. Here's how to avoid sogginess and cook the most delicious 'crispy on the outside, soft on the inside' fritters.

    The most important thing is to strain all of the liquid from the zucchini.

    • Place the grated zucchini into a fine strainer
    • Sprinkle over 2 teaspoon of salt and mix through (the salt will draw the liquid out of the zucchini)
    • Place the strainer over a bowl or sink and allow to sit for 10 minutes
    • Use your hands to squeeze ALL of the liquid out of the zucchini (this will take a minute or two)
    • Discard the liquid and use the strained zucchini in the fritter mixture

    ... and that's how to avoid soggy fritters!

    Recipe Tips & FAQ

    Are zucchinis and courgettes the same thing?

    Yes, absolutely! Here in Australia, we use the term zucchini. However, many other countries use the terms courgette or summer squash.

    How can I stop my fritters from going soggy?

    See my tips above for straining the liquid from the zucchini (this is the most important thing to do when making zucchini fritters!).

    What's the best way to drain the liquid from the zucchini?

    By placing the grated zucchini into a strainer, mixing through salt and allowing to sit for 10 minutes. Squeeze out all of the liquid and discard.

    How long will zucchini fritters last?

    You can store zucchini fritters in an airtight container in the fridge for 5-7 days.

    Can you freeze zucchini fritters?

    Yes! Place the fritters in an airtight container and freeze for up to 3 months. Place a sheet of baking paper between each layer of fritters.

    Healthy Zucchini Fritters

    Ingredients

    • 400 g zucchini approx 3-4, grated
    • 2 teaspoon salt
    • 75 g (½ cup) self raising flour
    • 40 g (½ cup) parmesan finely grated
    • 1 egg whisked
    • 2 teaspoon minced garlic optional
    • salt and pepper to season
    • 2 tbs olive oil

    Instructions

    Conventional Method

    • Place grated zucchini into a strainer and add the salt. Stir then leave for 10 minutes. Squeeze out all of the excess liquid. Place the zucchini into a bowl.
    • Add the self-raising flour, parmesan, egg, garlic and season with salt and pepper. Stir until well combined.
    • Heat 1 tbs of the oil in a frying pan over medium-high heat. Place tablespoons of the mixture into the pan.
    • Flatten out with a spatula and cook for 2 minutes on either side or until golden and crispy on the outside (they'll still be deliciously soft on the inside).
    • Repeat with the remaining mixture.

    Thermomix Method

    • Place roughly chopped zucchini into the Thermomix bowl. Grate by pressing Turbo 5-10 times or until coarsely grated.
    • Place grated zucchini into a strainer and add the salt. Stir then leave for 10 minutes. Squeeze out all of the excess liquid. Place the zucchini into a bowl.
    • Place the parmesan cheese into the Thermomix bowl and grate on Speed 10 for 10 seconds.
    • Add the self-raising flour, egg, garlic, zucchini and season with salt and pepper.
    • Mix on Reverse, Speed 5 for 10 seconds. Scrape down the sides of the bowl and repeat for a further 5 seconds.
    • Heat 1 tbs of the oil in a frying pan over medium-high heat. Place tablespoons of the mixture into the pan.
    • Flatten out with a spatula and cook for 2 minutes on either side or until golden and crispy on the outside (they'll still be deliciously soft on the inside).
    • Repeat with remaining mixture.

    Notes

      A perfect recipe. So easy to prepare and cooked and devoured within a few minutes.
      I made sure the moisture was removed from the zucchinis before adding to the flour mix...it certainly makes a difference to the finished product.
