You’ll only need a handful of basic pantry staples to make this chewy and golden ANZAC Slice — simple, fuss-free and budget-friendly!

- rolled oats - alternatively you can substitute the rolled oats with quick oats if you prefer
- golden syrup - if you can't access golden syrup, you can replace it with honey, rice malt syrup or maple syrup
Variations
Chocolate Chip ANZAC Slice – Stir through 150g of chocolate chips (milk, dark or white) before baking.
Fruit & Nut – Add a handful of chopped dried fruit (like cranberries, sultanas or apricots) and/or chopped nuts (walnuts or macadamias work well).
Coconut-Free – Leave out the coconut and replace with extra oats if you prefer.
Drizzle with Chocolate – Once cooled, drizzle melted chocolate over the top for an extra indulgent touch.
How To Make ANZAC Slice
This ANZAC Slice is so simple to make — just 10 minutes of prep and a few easy steps for a chewy, golden slice everyone will love!

- Step 1: Melt the butter, golden syrup and water and then stir through the bi-carbonate of soda until frothy.
- Step 2: Add the oats, brown sugar, flour and coconut into a bowl.
- Step 3: Mix together and set aside until needed.
- Step 4: Optional Step - Allow the mixture to cool and then stir through the chocolate chips.
- Step 5: Press the mixture firmly into your prepared baking tray and bake for 25 minutes or until the top of the slice is lightly golden brown.
Recipe Tips
- Use rolled oats – Quick oats make it too dense. Rolled oats give you that classic chewy texture.
- Heat the butter mixture – Make sure your butter and golden syrup mix is hot enough to activate the bicarb soda properly.
- Press it down firmly – Use the back of a spoon to press the mix into the tin evenly so it holds together when sliced.
- Cool completely before slicing – Let it cool in the tin before cutting, or it might fall apart.
- Add a twist if you like – Throw in some choc chips, dried fruit or chopped nuts if you want to mix things up.
- Store it right – Keep in an airtight container at room temp for up to a week.
- Freezer-friendly – Slice and freeze in an airtight container for up to 3 months. Just thaw at room temp when you need a snack!

ANZAC Slice
Ingredients
- 1 cup (90g) rolled oats
- 1 cup (150g) plain flour
- ⅔ cup (135g) brown sugar
- ⅔ cup (65g) desiccated coconut
- 125 g butter chopped
- 2 tbs golden syrup
- 2 tbs water
- ½ teaspoon bicarbonate of soda
- 150 g chocolate chips optional
Instructions
- Preheat oven to 170 degrees celsius (160 degrees cesius fan-forced).
- Grease and line a standard sized slice tray (approximately 18X28cm) with baking paper.
- Place butter, syrup and the water into a microwave-safe bowl and heat for 2 minutes on 70% power (or until the butter has melted). Stir through the bicarbonate of soda.If using a Thermomix: Place the butter, golden syrup, water and brown sugar into the TM bowl. Melt for 3 minutes, 100 degrees, Speed 1.
- Add the rolled oats, flour, sugar and coconut to the bowl and mix through.If using a Thermomix: Add the rolled oats, plain flour and coconut. Mix together for 40 seconds on Reverse, Speed 2.
- Optional Step: Allow the mixture to cool and then stir through the chocolate chips (if using).
- Place the mixture into the tray and press down firmly.Bake for approximately 25 minutes or until lightly golden brown.
- Leave in the baking tray to cool for 10 minutes before transferring to a wire rack to cool completely.When the slice has cooled completely, cut it into slices.

Oh my gee whiz. As an American who abhors oatmeal raisin cookies, I was expecting this to maybe perhaps be similar. I was so so so so so so so so so wrong. These are so incredibly dangerous. I'm so confused why are they so good. I hate half of the entire thing in one sitting I'm horrified how did that happen where did they go why are these so addicting. I also tried remaking it but swapping 25% of the flour for cocoa powder and again half of it disappears the moment it leaves the oven help me this is as addicting as crack I'm horrified at myself how did I eat all of it. Best recipe ever I'm a huge fan. But I'm also scared. So addicting. This is a wonderful recipe. This might become my favorite food blog.

Made this today for the kids after school play date. I made it vegan as wanted to see if it would work as very little substitutes needed (I used buttery nuttlex in place of butter) kids loved it and their friends couldn't even tell it was vegan x
