Healthy Sweet Potato, Zucchini & Bacon Slice

The most delicious and healthy sweet potato, zucchini & bacon slice! This freezer-friendly slice is perfect for the whole family!

Ever since Will started solids (which was a year ago now… where the heck did that time go!!??), I’ve been on a mission to smuggle as many vegetables possible into his meals… which brings me to this fabulously healthy sweet potato, zucchini and bacon slice…!

This is basically a variation of my all-time favourite zucchini slice, as well as my carrot & zucchini slice. But hey! What’s the point in changing something too much when it’s super delicious as is! This version is just as quick, easy and yummy!

If you’ve been reading my little blog for a while (firstly THANK YOU… and I’m sending you big cyber hugs), you’ll know that I’m a big fan of Will eating pretty much whatever Dave and I eat. I spend wayyyy too much time in the kitchen already without having to worry about cooking seperate meals. And that is pretty much the main reason I love this healthy sweet potato, zucchini & bacon slice so much. Yep, it’s perfect for an easy midweek dinner or a quick and easy ‘grab out of the freezer and reheat lunch’ AND we all like it. Winner. Winner!!

Ooh yes, sorry I should have mentioned that this little thing is completely freezer friendly! It makes a massive slice, so cut any leftovers into slices and freeze in an airtight container or ziplock bags. Easy-peasy!

Healthy Sweet Potato, Zucchini & Bacon Slice

The most delicious and healthy sweet potato, zucchini & bacon slice! This freezer-friendly slice is perfect for the whole family!

Ingredients

  • 4 rashers bacon chopped
  • 1 sweet potato grated (medium sized)
  • 1 zucchini grated (medium sized)
  • 1 onion finely chopped
  • 1 tbs minced garlic (optional)
  • 1 tbs dried herbs (chives, parsley etc)
  • 1 cup cheddar cheese grated
  • 4 eggs
  • 1 cup self-raising flour
  • salt and pepper to taste

Instructions

Conventional Method

  • Preheat oven to 200 degrees celsius (fan-forced).
  • Grease a large rectangular baking tray.
  • Place all of the ingredients into a large bowl and mix well to combine. 
  • Pour the mixture into the prepared baking tray and cook for 50-60 minutes or until golden on top and cooked through.

Thermomix Method

  • Preheat oven to 200 degrees celsius (fan-forced). Grease a large rectangular baking tray and set aside. 
  • Place the bacon, sweet potato, zucchini, onion and cheese into the Thermomix bowl. Grate on Speed 10, 10 seconds. Scrape down the sides of the bowl and repeat until grated. 
  • Add the minced garlic, herbs, eggs, self raising flour, salt and pepper and mix on Reverse, Speed 3 until combined (use the spatula to assist). 
  • Pour the mixture into the prepared baking tray and cook for 50-60 minutes or until golden on top and cooked through.

Notes

If the slice is browning too much, place a sheet of foil over the top and continue cooking.
