    The BEST no-bake Chocolate Mint Slice ever!!! A simple biscuit base topped with milk chocolate and decorated with all your favourite peppermint chocolates!

    Oh. My. Gosh. OH MY GOSH!!!! Please can we just take a second to appreciate the total and utter delicious of this Chocolate Mint Slice.

    Totally delish right!!?? Well let me tell you... this slice is evvvvverything (and so much more!). In fact it's a zillion times more! And if you're a mint-chocolate loving gal (or guy), then it's a bazillion times more. You get the point right???

    This Chocolate Mint Slice is a variation on one of the very first recipes that I ever put on Bake Play Smile. The original recipe was called Peppermint Crisp Slice and was given to me by a friend I used to teach with. And you know when you find a recipe you love, you make it over and over and over again and then start making teensy little changes to make it even better. Well that's the case with this new mint slice recipe. It's just like the original, but with a few changes!!

    The base is still exactly the same as the original recipe.. a super simple no-bake biscuit base made with condensed milk, butter and Peppermint Crisp bars. BUT the chocolate topping is totally different!! In this recipe I've used a classic milk chocolate layer and decorated it with ALL of my favourite peppermint chocolates and biscuits - Mint Slice biscuits, Mint Patties, Peppermint Crisp bars and Flake chocolate bars. See... ALL the mint chocolate goodness!

    Oooh and while we're talking about mint slice recipes... have you made my Peppermint Chocolate Slice or my Traditional Peppermint Slice yet?? Hmm... I'm starting to think I have a bit of a mint slice obsession going on!!!

    Mint Chocolate Slice

    The BEST no-bake Mint Chocolate Slice ever!!! A simple biscuit base topped with milk chocolate and decorated with all your favourite peppermint chocolates!

    Ingredients

    • 250 g plain sweet biscuits like Arnotts Marie biscuits
    • 300g sweetened condensed milk (¾ of a 395g tin)
    • 100 g butter
    • 3 Peppermint Crisp bars crushed
    • 250 g milk chocolate
    • 2 tbs vegetable oil (or coconut oil) optional
    • any of your favourite peppermint chocolates and biscuits, to decorate

    Instructions

    Conventional Method

    • Grease and line the base and sides of a 20cm X 28cm rectangular slice tin with baking paper. 
    • Crush the biscuits in a food processor and set aside. 
    • Melt the condensed milk and butter in the microwave on 30 second bursts until melted. Mix until smooth.
    • Add the condensed milk mixture and the crushed Peppermint Crisp bars to the biscuits and mix well.
    • Press the mixture firmly into the prepared tin. 
    • Meanwhile, melt the chocolate and vegetable oil (or coconut oil) in the microwave for 30 second bursts on 50% power until just melted. 
    • Spread the melted chocolate over the top of the slice and decorate with your favourite chopped peppermint chocolates and biscuits. 
    • Place into the fridge for 2-3 hours before cutting into slices. 

    Thermomix Method

    • Grease and line the base and sides of a 20cm X 28cm rectangular slice tin with baking paper. 
    • Place the biscuits into the Thermomix bowl and crush on Speed 9, 10 seconds. Remove and set aside in a seperate bowl. 
    • Place the condensed milk and butter into the Thermomix bowl (no need to clean it) and melt on 80 degrees, 3 minutes, Speed 2. 
    • Add the crushed Peppermint Crisp bars and the crushed biscuits to the Thermomix bowl. Mix on Speed 4, 5 seconds. Scrape down the sides of the bowl and repeat until combined. 
    • Press the mixture firmly into the prepared tin. Melt the chocolate and vegetable oil (or coconut oil) in a clean Thermomix bowl on 50 degrees, 3 minutes, Speed 2. 
    • Spread the melted chocolate over the top of the slice and decorate with your favourite chopped peppermint chocolates and biscuits. 
    • Place into the fridge for 2-3 hours before cutting into slices. 

    Notes

    I used Arnotts Marie biscuits in this recipe, however you can use any type of sweet plain biscuit/cookie you like. 
    Adding vegetable oil or coconut oil to your chocolate will help to assist with slicing (it makes the chocolate less likely to crack). 
    I decorated my slice with chopped Mint Slice biscuits, Flake chocolate, Mint Patties and extra Peppermint Crisp bars. You can use any peppermint biscuits or chocolates you like.
