The ultimate Baileys Chocolate Ripple Cake decorated with fresh berries and chocolate.... this simple dessert takes just 10 minutes to prepare and is the perfect no-bake 'adults-only' recipe!
We all know and love a traditional Aussie Choc Ripple Cake - it's such a classic recipe that everyone enjoys.
However it's SO easy to take this recipe up a notch and make it into a delicious 'adults only' treat with the addition of smooth Baileys Irish Cream.
Baileys and chocolate just go hand-in-hand, and the smoothness of Irish cream liqueur adds a creamy, luscious flavour to so many dessert recipes.
Here's a few of my other recipes using Baileys that I think you'll love:
- Boozy Baileys Brownies - a deliciously wicked little brownie slice made with dark chocolate and Baileys, and then topped with a slick of Baileys flavoured chocolate frosting - ohhhhh, yes please!
- Baileys Malteser Cheesecake - a white chocolate no-bake cheesecake. Chocolate + Baileys + Maltesers = the perfect boozy dessert!
- Baileys Choc Brownie Trifle - this decadent dessert with layers of crumbled brownie, custard, whipped cream, salted caramel sauce, and of course a good lashing of Baileys is simply the best.
- Baileys Chocolate Cheesecake - a delicious adults-only cheesecake dessert that is also a no-bake winner! Make it the day before to really let those smooth Baileys flavours fully develop.

Step By Step Instructions
A simple 3 step no-bake dessert!
Note: Please scroll to the recipe card at the bottom of the post for ingredient quantities and the full detailed method.
Step 1 - Whip the Cream
Using hand held beaters, a stand mixer or a Thermomix, beat the cream until soft peaks form.
Add Baileys Irish Cream to the bowl of whipped cream.
Gently beat the Baileys and cream together until well combined.
Step 2 - Assemble
Spread a line of whipped cream along your serving dish. This helps the biscuits stand up in a straight line when assembling.
Spread a teaspoon of whipped cream on to a chocolate biscuit then sandwich together with another biscuit.
Repeat in stacks of 3-4 biscuits, then place stack upright onto the whipped cream on the serving plate.
Once all of the biscuits have been sandwiched together, cover the entire log with the remaining whipped cream and then refrigerate, preferably overnight.
Step 3 - Decorate
Remove from the fridge.
When ready to serve, decorate with fresh strawberries, blueberries and raspberries, chocolate shards and a few fresh mint leaves.
Of course, you can use any other favourite toppings you like too!
Expert Tips & FAQ
Homemade Baileys is quick and simple to make using just 5 pantry ingredients and some Irish whiskey. It makes a fantastic gift for your family and friends in a cute little bottle as well. Click here for how to make your own Baileys.
To make chocolate shards, melt milk and white chocolate in separate bowls and then spread them over baking paper in a thin layer. Roll the baking paper up tightly and place in the fridge until set. When the chocolate has set, unravel the baking paper and you'll have beautiful chocolate shards.
This is important when making this Baileys chocolate ripple cake as the chilling time allows the crunchy biscuits to soften, to soak up the Baileys flavour, and to become soft and cake-like (the ultimate texture for any chocolate ripple cake!)

Baileys chocolate ripple cake is amazing! I ‘paint’ my chocolate ripple biscuits with a little baileys first before spreading the cream.
