    Super Easy Microwave Rocky Road Fudge

    The easiest Microwave Rocky Road Fudge! Make it in less than 5 minutes by melting condensed milk, chocolate and butter in the microwave, and then stirring through mini marshmallows, peanuts and Turkish Delight chunks... how easy is that!

    Wow! This is my last Christmas recipe for 2015!!! I can't believe it. While it feels like I've been making Christmassy foods for months now, the big day has still somehow managed to sneak up on me. Does that happen to you too?

    Well, my last little bit of Christmassy goodness is one of my go-to recipes. Yep, this Microwave Rocky Road Fudge with peanuts, mini marshmallows and Turkish Delight chunks is the perfect thing when you need a last minute gift in a hurry.

    Unlike a lot of fudge recipes, there's no mucking around with glucose syrup or anything tricky like that. You literally just melt the milk chocolate, sweetened condensed milk and butter in the microwave. Stir through the yummy rocky road ingredients and mix together. Pour it into a prepared tin and then wait (very impatiently!) for it to set. Honestly, it doesn't get any simpler than that.

    This makes a great foodie gift for friends or family. And because it's quite rich, a little goes a long, long way!

    I always make about a zillion batches (or at least it feels that way) of rocky road at Christmas, so this fudge is the perfect change. It still has the same amazing rocky road flavours, but with a little bit of a difference. And really, who can resist a little slice of fudge??

    Super Easy Microwave Rocky Road Fudge

    The easiest Microwave Rocky Road Fudge! Make it in less than 5 minutes and perfect for that sweet treat or gift!

    Ingredients

    • 300 g milk chocolate or dark chocolate
    • 400 g sweetened condensed milk
    • 30 g unsalted butter chopped
    • 1 ½ cups (90g) mini marshmallows
    • ½ cup (80g) peanuts roasted and salted
    • 110 g Turkish Delight bars chopped into small chunks

    Instructions

    Microwave Method

    • Line a 20cm square baking tin with baking paper and set aside.
    • Place the milk chocolate, condensed milk and butter into a microwave safe bowl.
    • Melt on 50% power in the microwave in 30 second bursts, stirring with a dry metal spoon each time.
    • Cook until just melted (do not over-cook) - it will take approximately 2-3 minutes.
    • Quickly stir through the mini marshmallows, peanuts and Turkish Delight chunks.
    • Pour the fudge into the prepared tin and smooth the top with a spoon.
    • Place into the fridge for at least 4 hours or until completely set (preferably overnight).
    • Slice into pieces.
    • Keep fudge in an airtight container in cool temperatures (room temperature is fine in cooler climates - otherwise pop it in the fridge).

    Thermomix Method

    • Line a 20cm square baking tin with baking paper and set aside.
    • Place the milk chocolate, condensed milk and butter into the TM bowl. Melt on 100 degrees, Speed 3, 5 minutes.
    • Add the mini marshmallows, peanuts and Turkish Delight chunks and mix together with a spoon.
    • Pour the fudge into the prepared tin and smooth the top with a spoon.
    • Place into the fridge for at least 4 hours or until completely set (preferably overnight).
    • Slice into pieces.
    • Keep fudge in an airtight container in cool temperatures (room temperature is fine in cooler climates - otherwise pop it in the fridge).
