    If you're after the quickest sweet treat ever, these White Chocolate, Coconut & Apricot Balls are creamy, chewy, fruity and so ridiculously easy!

    They take less than 10 minutes to prepare, freeze beautifully, and are perfect for lunchboxes, afternoon snacks or a no-fuss dessert.

    Apricot Ball Ingredients

    Condensed milk, apricots, white chocolate and coconut in small bowls.

    Just a handful of simple ingredients!
    Only include the notes below if they're needed for success:

    • Dried Apricots - you must use dried apricots for this recipe (fresh apricots are far too soft and will make the mixture mushy).
    • Desiccated Coconut - the fine texture is essential for binding and coating (avoid shredded coconut).

    Variations

    • Gluten-Free Apricot Balls: Use certified gluten-free desiccated coconut and ensure your white chocolate is GF.
    • No White Chocolate: Swap for extra dried apricots or add 2 tablespoon coconut instead.
    • Add Nuts: Stir through chopped almonds, cashews or pistachios for texture (not lunchbox-friendly in nut-free schools).
    • Chocolate-Dipped: Dip the chilled balls into melted white or dark chocolate for a sweeter dessert version.

    How To Make White Chocolate, Coconut & Apricot Balls

    These take just a few simple steps - perfect for kids or beginners.

    1. Step 1: Chop the apricots:
      Place dried apricots into a food processor, blender or Thermomix. Blitz until finely chopped.
    Finely chopped dried apricots and white chocolate in a white bowl.
    1. Step 2: Chop the chocolate:
      Add the white chocolate and pulse until everything is in small, even pieces.

      Add the sweetened condensed milk and coconut. Mix until well combined and sticky.
    1. Step 4: Chill:
      Refrigerate the bowl for 30 minutes or until firm enough to roll.

      For large balls, scoop tablespoons of mixture, roll into balls, then coat in extra coconut. For small balls, scoop heaped teaspoon-sized of mixture, roll and coat.

    Top Tip

    If the mixture feels too soft or sticky to roll, add 2-3 tablespoons of extra coconut and chill again.

    Recipe Tips

    • Use full-fat sweetened condensed milk for the best texture - it sets firmer than skim.
    • Finely chop the apricots and chocolate for even distribution through the mixture.
    • Double batch - this recipe can easily be doubled.
    • Wet your hands lightly before rolling to prevent sticking.
    • Chill before rolling - don't skip this step!
    • Too soft? Add extra coconut until the texture firms up.
    • Storing: Keep in an airtight container in the fridge for 1 week.
    • Freezing: Freeze in a sealed container or ziplock bag for up to 3 months. Thaw in the fridge when ready to eat.

    Can I use fresh apricots instead of dried apricots?

    No - fresh apricots contain too much moisture and won't hold the mixture together.

    Can I make apricot balls nut-free?

    Yes! This recipe is naturally nut-free, making it perfect for school lunchboxes.

    Can I make apricot balls dairy-free?

    Not easily - sweetened condensed milk is essential for binding. There are vegan condensed milk options, but the flavour and texture will vary.

    How do I make the balls firmer?

    Chill the mixture longer and add extra coconut until it firms up enough to roll.

    Instructions

    Conventional Method

    • Chop the apricots: Place the dried apricots into a food processor or blender. Blitz until finely chopped.
    • Add the white chocolate: Pulse until the chocolate is in small, even pieces and mixed through the apricots.
    • Combine: Transfer the mixture to a bowl. Add the sweetened condensed milk and coconut, stirring until well combined.
    • Chill: Refrigerate the mixture for 30 minutes, or until firm enough to roll.
    • Roll: Scoop tablespoons of mixture, roll into balls, then coat in extra coconut.
    • Serve or store: Keep chilled in an airtight container for 1 week, or freeze for up to 3 months.

    Thermomix Method

    • Chop the apricots: Add dried apricots to the bowl. Turbo 5-10 times until finely chopped.
    • Add the white chocolate: Turbo 2-3 times until roughly chopped and combined.
    • Mix: Add the sweetened condensed milk and coconut. Mix 5-10 seconds, Speed 3 or until combined.
    • Chill: Refrigerate for 30 minutes to firm.
    • Roll: Roll tablespoon-sized balls and coat in extra coconut.

      YUMMO, I love apricot balls and I haven't had them in ages. I love that you use chocolate in them - what a treat. I use biscuits to bulk mine out.
