Instructions
Conventional Method
Chop the apricots:
Place the dried apricots into a food processor or blender. Blitz until finely chopped.
Add the white chocolate:
Pulse until the chocolate is in small, even pieces and mixed through the apricots.
Combine:
Transfer the mixture to a bowl. Add the sweetened condensed milk and coconut, stirring until well combined.
Chill:
Refrigerate the mixture for
30 minutes
, or until firm enough to roll.
Roll:
Scoop tablespoons of mixture, roll into balls, then coat in extra coconut.
Serve or store:
Keep chilled in an airtight container for 1 week, or freeze for up to 3 months.
Thermomix Method
Chop the apricots:
Add dried apricots to the bowl. Turbo
5–10 times
until finely chopped.
Add the white chocolate:
Turbo
2–3 times
until roughly chopped and combined.
Mix:
Add the sweetened condensed milk and coconut. Mix
5–10 seconds, Speed 3
or until combined.
Chill:
Refrigerate for
30 minutes
to firm.
Roll:
Roll tablespoon-sized balls and coat in extra coconut.
Notes
RECIPE NOTES & TIPS
Use full-fat sweetened condensed milk
for the best texture - it sets firmer than skim.
Finely chop the apricots and chocolate
for even distribution through the mixture.
Wet your hands
lightly before rolling to prevent sticking.
Chill before rolling
- don't skip this step!
Too soft?
Add extra coconut until the texture firms up.
Storing:
Keep in an airtight container in the fridge for 1 week.
Freezing:
Freeze in a sealed container or ziplock bag for up to 3 months. Thaw in the fridge when ready to eat.
