    An easy coleslaw recipe made using cabbage, carrot and spring onions tossed through a creamy egg mayonnaise and sour cream dressing.

    Thermomix cabbage coleslaw is my go-to recipe for a deliciously creamy salad... it's perfect for summer BBQs or as an accompaniment to grilled meat or seafood.

    Just like my creamy pasta salad and creamy potato salad recipes, this KFC style coleslaw is comfort food at it's very best!

    Make it ahead of time and let the flavours develop... it's simply irresistible.

    What You Need

    This really is the BEST Thermomix coleslaw recipe!!

    For The Coleslaw

    Chunks of cabbage, spring onions and carrot for coleslaw.
    • Cabbage - I like to use a combination of purple and green cabbage as it gives the coleslaw a beautiful, bright colour. If you prefer, you can use just one variety of cabbage. For a more traditional KFC-style coleslaw, use only green cabbage.
    • Carrot - peel and roughly chop the carrots.
    • Spring Onions - optional, but highly recommended.

    For The Creamy Dressing

    • Whole egg mayonnaise - for the creamiest texture, I recommend using a full fat (not light) whole egg mayonnaise. You can use a store-bought whole egg mayonnaise or make your own.
    • Sour cream - again, use a full fat sour cream for the ultimate creamy dressing.
    • Apple cider vinegar - or you can substitute with white wine vinegar.
    • Dijon mustard - a classic coleslaw dressing ingredient.
    • Caster Sugar - this variety of sugar is perfect for coleslaw as it dissolves easily when mixed with the remaining dressing ingredients and perfectly balances the vinegar and mustard.

    Equipment Required

    This easy Thermomix coleslaw recipe puts the Thermomix machine to work chopping the vegetables and mixing the dressing.

    • Thermomix machine - this recipe is suitable for all Thermomix models.
    • Large mixing bowl and spoon - for assembling the salad and dressing.

    Step By Step Instructions

    It couldn't be easier to make my Thermomix creamy KFC style coleslaw.

    Step 1 - Chop The Carrot & Spring Onion

    Roughly chop the carrot and spring onion.

    Place into the Thermomix bowl.

    Chop for 2 seconds (or until chopped to your liking).

    TIP: The Thermomix chops incredibly fast! Keep a close eye on your vegetables and only chop for 1 second at a time, until you're happy with how finely shredded the vegetables are.

    Place the chopped carrot and spring onion into a large mixing bowl.

    Step 2 - Chop The Green Cabbage

    Without washing the bowl, place the roughly chopped green cabbage into the Thermomix bowl.

    Chop until finely grated and set aside in the large mixing bowl with the carrot and spring onions.

    Step 3 - Chop The Purple Cabbage

    Again, without washing the bowl, place the roughly chopped purple cabbage into the Thermomix bowl.

    Chop until finely grated and add to the large mixing bowl.

    Step 4 - Prepare The Dressing

    Place all of the dressing ingredients into the Thermomix bowl.

    TIP: There's no need to wash the bowl after chopping the vegetables.

    Step 5 - Combine The Salad And Dressing

    Pour the dressing over the chopped vegetables and mix to thoroughly combine.

    Cover and place into the fridge for a minimum of 1 hour (preferably overnight).

    Expert Tips

    • Chop the vegetables in batches - it's important to chop the vegetables in batches in the Thermomix to ensure that they are evenly chopped. If you try to chop too much cabbage at once, the pieces at the bottom of the machine will be shredded too finely, while the pieces on top will remain un-chopped.
    • Chopping in the Thermomix - the Thermomix chops incredibly fast! Keep a close eye on your vegetables and only chop for 1 second at a time, until you're happy with how finely shredded the vegetables are.
    • Cabbage - I like to use a combination of purple and green cabbage in my Thermomix coleslaw as I like the look of the bright and colourful salad it makes. However, if you would like your Thermomix coleslaw salad to look more like a KFC-style coleslaw, then simply omit the purple cabbage and double the amount of green cabbage.
    • Make ahead of time - coleslaw is best prepared the day before serving. This allows time for the flavours to combine and the dressing to soften the cabbage, giving it a deliciously creamy texture.
    • Storing - store coleslaw in an airtight container in the fridge for up to 2 days.
    • Freezing - you can freeze coleslaw for up to 4 months. Allow to defrost in the fridge and stir to recombine the vegetables and dressing before serving, but note, once defrosted, the coleslaw will have a more watery texture than fresh coleslaw.

    Can you freeze coleslaw?

    Coleslaw can be frozen for up to 4 months - however it breaks down in the freezer and can become a little watery once defrosted. Allow the coleslaw to defrost in the fridge, and drain any excess water off. Before serving, give the coleslaw a good stir to combine the dressing through the vegetables again.

    What is coleslaw made of?

    Coleslaw is traditionally made with shredded cabbage. Carrot, apple, spring onions and radish are also commonly added to the cabbage. The shredded vegetables are then tossed through a creamy dressing.

    How many calories are in homemade coleslaw?

    My Thermomix KFC creamy style coleslaw contains 180 calories per serve.

    Can I make coleslaw without a Thermomix?

    Absolutely! Finely chop the carrots, spring onion and cabbage and place into a large bowl. Whisk the dressing ingredients together in a separate bowl and then stir through the shredded vegetables to combine. Chill coleslaw for at least an hour, preferably overnight.

    Is coleslaw keto friendly?

    Absolutely!!! Coleslaw is the perfect keto side dish. Its rich and creamy dressing combined with the shredded vegetables makes it ideal for a keto diet.

    Ingredients

    For The Coleslaw

    • 25 g spring onion roughly chopped
    • 200 g carrot roughly chopped (1 large or 2 small)
    • 300 g green cabbage roughly chopped (¼ purple cabbage)
    • 300 g purple cabbage roughly chopped (¼ purple cabbage)

    For The Dressing

    • 120 g whole egg mayonnaise
    • 120 g sour cream or thick greek yoghurt
    • 15 g apple cider vinegar
    • 20 g dijon mustard
    • 30 g caster sugar
    • salt and pepper to taste

    Instructions

    • Place the spring onion and carrot into the Thermomix bowl. Chop for 2 seconds, Speed 5 (or until chopped to your liking). Place into a large bowl and set aside.
    • Place the green cabbage into the Thermomix bowl and chop for 2 seconds, Speed 5. Add to the bowl with the carrot and spring onions and set aside.
    • Place the purple cabbage into the Thermomix bowl and chop for 2 seconds, Speed 5. Add to the large bowl and set aside.
    • To make the dressing, add all of the dressing ingredients to the Thermomix bowl (no need to wash it after chopping the vegetables).
      Mix for 10 seconds, Speed 4. Scrape down the sides of the bowl and then mix for a further 10 seconds.
    • Pour the dressing over the vegetables and mix until well combined.
    • Store in the fridge for up to 2 days. Mix with a spoon before serving to ensure the dressing is evenly covering the coleslaw.
