You know what’s even better than plain, simple (and totally delicious) popcorn? SALTED CARAMEL POPCORN!! Yes it deserves it’s very own capital letters because it’s that good! It’s a little bit salty, a little bit sweet and utterly drool worthy. If you haven’t ever eaten salted caramel popcorn, then OMG this is going to blow your mind. Read the recipe, then run to the supermarket (if you don’t already have the ingredients), race back home and make a big batch. You are going to have your sugary mind blown!

It’s actually really simple to make your own salted caramel popcorn. A lot of caramel popcorn recipes involve cooking the popcorn in the oven (and you really do get a great crunch if you do that), but this recipe doesn’t involve turning the oven on at all. Even better, it will take you about 10 minutes to make a batch… meaning that your mega cravings can be met in no time at all!

Now this recipe should come with a little warning… it involves a little bit of patience and self control (well self control at the start anyway!). Once you’ve made the salted caramel popcorn you have to wait for it to cool before breaking it into chunks. And that my friends, is a ridiculously hard thing to do. Trust me, all you’ll want to do is have a little nibble, but wait!!!! Because it really does get even better once it’s cooled.

And once you have that big bowl of delicious salted caramel popcorn in front of you, the little bit of waiting will be totally worth it. At that stage, you can of course, throw out any last scrap of self control you have and go for it.

Now I think that this would last for a couple of days in an airtight container, but I really couldn’t tell you for certain. It has never, ever made it past the 1 day mark in our house. Ever. Embarrassing? Yes! But it does go to show how completely addictive this stuff is!!

Salted Caramel Popcorn - Conventional Method

Ingredients

  • Cooked popcorn about 4 cups
  • 3/4 cup brown sugar
  • 125 g butter
  • 2 tablespoons honey or rice malt syrup
  • Pinch of salt
  • Optional - 1/2 cup chopped nuts pecans, peanuts

Instructions

  1. Cook popcorn according to the packet instructions and place into a large bowl.
  2. Melt the brown sugar, butter, honey and salt in a saucepan over a low heat until the sugar has dissolved.
  3. Simmer, uncovered, for 4-5 minutes, stirring occasionally.
  4. Pour the caramel sauce over the popcorn and use a spoon to stir it through until all of the popcorn is completely covered (if using chopped nuts, add them in before stirring).
  5. Spoon the mixture into one even layer onto a baking paper lined tray.
  6. Set aside to cool completely.
  7. Once completely cooled, break the popcorn into pieces and store in an airtight container.

Ingredients

  • Cooked popcorn about 4 cups

  • 2 tablespoons honey or rice malt syrup
  • Pinch of salt

  3. Mix on 70 degrees, Speed 2 for 4 minutes.
  4. Scrape down the sides of the bowl.
  5. Mix on Varoma temperature, Speed 2 for 8 minutes.
  6. Pour the caramel sauce over the popcorn and use a spoon to stir it through until all of the popcorn is completely covered (if using chopped nuts, add them in before stirring).
  7. Spoon the mixture into one even layer onto a baking paper lined tray.
  8. Set aside to cool completely.
  9. Once completely cooled, break the popcorn into pieces and store in an airtight container.
  10. * Note that you can mix the popcorn with the caramel sauce in the Thermomix on Reverse Speed 1, however I find it easier to stir it in a separate bowl - and the pieces stay together better too!

  1. I’ve become a bit obsessed with popcorn since I unearthed my popcorn machine from the back of the kitchen cupboard. I’ve been eating it au naturel because that’s healthy but man, now you’ve shown me how to make this in the Thermomix, it’s going to be salted caramel all the way!

    Anyway, in relation to the matter at hand, I can’t eat much salted caramel anymore and I’m not sure if it’s because I ate too much of it during my last pregnancy.     I made this last night and it was delicious. We couldn’t stop eating it and it was gone in no time. I did find that the caramel was like a sauce and was sticky so we could scrape it off the bottom of the tray. Should it set hard and dry? Should I have cooked the caramel longer? Any ideas?

      Oh thats so great to hear!! Because it’s not baked in the oven, the caramel will stay a little sticky. Definitely cooking the sauce longer will make it less runny (and it depends a lot on the stove top you’re using!). When I make mine, there’s hardly any sauce that ends up on the tray as it’s quite thick – if you give it a really good stir with the popcorn before putting it on the tray it will help to soak up the sauce too. 🙂

      Hi Jody – I think if you were making and serving it straight away it would be perfect! If you wanted a really crispy popcorn on the top that would last for a couple of days, you would probably need to use one of the caramel popcorn recipes that are baked in the oven. 🙂

    Have made 2 batches in 2 days…absolutely delicious and addictive!!!
    I think I will make it in the TM5 next time…have used the TM 31, and the caramel stays really soft…doesn’t go hard. Still really delicious though!
    I also sprinkled a little extra salt over it while it was setting, I must have used too small a pinch initially 🙂

    I have tried to make the thermomix version a couple of times but no matter how long I leave it cooking the caramel doesn’t brown up at all even after 25 minutes and the sugar doesnt dissolve properly… I’m not sure what I’m doing wrong! Once I transfer it to the stove it browns up in no time at all and it turns out beyond delicious! Thanks

      Hmm that’s very strange!!! I really don’t know why it’s not dissolving properly for you? I’m a bit the same as you when I make caramel slice – I prefer to do the caramel filling on the stovetop as I find the Thermomix can be a little bit hit and miss thickening it up enough.

    I am absolutely LOVING this popcorn – thank you for posting it! I didn’t have brown sugar so just used normal sugar and heated the mixture to 300 degrees before pouring it over the popcorn and it’s divine! I used a full teaspoon of salt. I think you should pay for my gym membership though – SUPER dangerously good! I’ll be giving them out as Christmas treats this year.
