Strawberry Martini

Place the strawberries and caster sugar (or simple sugar syrup) into a food processor or blender. Mix on high speed until smooth.
If using a Thermomix: Mix for 10 seconds, Speed 8.
Place the pureed strawberries into a cocktail shaker. Add the lime juice, vodka and ice cubes.
Shake well for 1 minute.
If using a Thermomix: Add the lime juice, vodka and ice cubes to the strawberry puree and mix for 10 seconds, Speed 8.
Strain the liquid into 2 martini glasses.
Serve immediately.

RECIPE NOTES & TIPS

Serve immediately after making - this cocktail is best served ice cold!
Straining the cocktail into the glass removes any excess ice cubes or chunks of strawberry.
To serve - garnish with a fresh strawberry.
Use martini glasses if you have them - otherwise use any other cocktail glasses you have on hand.
