Can't decide between a pina colada or a frozen strawberry daiquiri? Well now you don't have to! Our Miama Vice cocktail is made with layers of both... simply perfect!
165gstrawberriesfrozen is best but fresh can also be used
30mllime juice
30mlsimple syrupsugar syrup
250gice cubes
For The Pina Colada
30mlwhite rumlike Malibu or Bacardi
60mlcoconut cream
60mlpineapple juice
250gice cubes
Instructions
Prepare The Strawberry Daiquiri
Place the white rum, strawberries, lime juice, simple syrup and ice cubes into a high powered blender or a Thermomix.
Blend on high for 30 seconds or until smooth. If using a Thermomix: mix for 30 seconds, Speed 8.
Divide the strawberry daiquiri between 2 serving glasses (filling halfway to the top) and then place into the freezer while you prepare the pina colada.
Prepare The Pina Colada
In a clean blender or Thermomix, place the white rum, coconut cream, pineapple juice and ice cubes.
Blend on high for 30 seconds or until smooth. If using a Thermomix: mix for 30 seconds, Speed 8.
Serve
Carefully pour the pina colada over the top of the frozen strawberry daiquiri and serve immediately.
Notes
RECIPE NOTES & TIPS
The daiquiri and pina colada should have a slushy-like texture. If they're too runny, add extra ice cubes and blend until smooth.
Freeze the strawberry daiquiri while you prepare the pina colada to stop it from melting.
Garnish - with a fresh strawberry or slice of pineapple.
Serve immediately - this cocktail is best served icy cold.
