Place the vodka, Chambord and pineapple juice into a cocktail shaker.
Add 1 cup ice cubes.
Shake for 45 seconds.
If using a Thermomix: Place all of the ingredients into the Thermomix bowl and mix for 30 seconds, REVERSE, Speed 4 with the MC in place.
Strain the cocktail into two martini glasses and serve with a fresh raspberry on top (optional).

RECIPE NOTES & TIPS

Chambord is a black raspberry liqueur made in the Loire Valley in France. It's made from blackberries, raspberries and blackcurrants.
Use a cocktail shaker or a Thermomix and mix well until thoroughly combined - this is what will give you the classic frothy white top.
Strain the cocktail into serving glasses and remove any remaining excess ice.
Use martini glasses if you have them - or substitute for any cocktail glasses you have on hand.
Serve immediately with a fresh raspberry on top!
