Quick & easy no-bake White Chocolate, Coconut & Apricot Balls made with sweetened condensed milk take less than 10 minutes and are the perfect little treat!
Place the dried apricots into a food processor, blender or Thermomix.
Mix on Turbo Speed for 5-10 seconds or until you have fine chunks (you can mix it for less time if you'd like bigger chunks).
Add the white chocolate chips and press Turbo 2-3 times or until the chocolate has been slightly chopped (but still a little chunky).
Add the sweetened condensed milk and coconut and mix together for 5-10 seconds on low speed until completely combined.
Chill the mixture in the fridge for 30 minutes.
Roll the mixture into tablespoon-sized balls (wet your hands first to make this easier). If the mixture is too soft, add a little more coconut.
Roll the balls in the extra coconut.
Store in an airtight container in the fridge for up to 1 week.

RECIPE NOTES & TIPSIngredients Info:
dried apricots – these can be bought in the dried fruit section of any supermarket or grocer. These apricot balls require the firm texture of dried apricots (fresh apricots are not suitable).
sweetened condensed milk – I recommend using full fat sweetened condensed milk for this recipe as it tends to set firmer than the skim version.
white chocolate – you can use either white chocolate chips/bits or a block of white chocolate broken into pieces. Chop in a food processor, blender or Thermomix (or chop with a knife) until very finely chopped.
desiccated coconut – this is a type of fine coconut that is perfect for coating the apricot balls.
Recipe Notes:Equipment - the easiest options for chopping the apricots and chocolate are either a food processor or a Thermomix. Alternatively a blender or a sharp knife can be used.Number of serves - this recipe makes 16 large balls or 24 small balls.Storing and freezing - apricot balls can be stored in an airtight container in the fridge for up to 1 week. Alternatively, freeze the balls in an airtight container (or sealable plastic bags) for up to 3 months.
