Apricot, White Chocolate & Coconut Balls

Quick & easy no-bake White Chocolate, Coconut & Apricot Balls made with sweetened condensed milk take less than 10 minutes and are the perfect little treat!

Equipment

  • food processor, blender or Thermomix

Ingredients

  • 200 g dried apricots
  • 130 g (¾ cup) white chocolate chips
  • 200 g sweetened condensed milk approximately half a 395g can
  • 100 g (1 cup) desiccated coconut plus extra for rolling

Instructions

  • Place the dried apricots into a food processor, blender or Thermomix.
  • Mix on Turbo Speed for 5-10 seconds or until you have fine chunks (you can mix it for less time if you'd like bigger chunks).
  • Add the white chocolate chips and press Turbo 2-3 times or until the chocolate has been slightly chopped (but still a little chunky).
  • Add the sweetened condensed milk and coconut and mix together for 5-10 seconds on low speed until completely combined.
  • Chill the mixture in the fridge for 30 minutes.
  • Roll the mixture into tablespoon-sized balls (wet your hands first to make this easier). If the mixture is too soft, add a little more coconut.
  • Roll the balls in the extra coconut.
  • Store in an airtight container in the fridge for up to 1 week.

RECIPE NOTES & TIPS
Ingredients Info: 
  • dried apricots – these can be bought in the dried fruit section of any supermarket or grocer. These apricot balls require the firm texture of dried apricots (fresh apricots are not suitable).
  • sweetened condensed milk – I recommend using full fat sweetened condensed milk for this recipe as it tends to set firmer than the skim version.
  • white chocolate – you can use either white chocolate chips/bits or a block of white chocolate broken into pieces. Chop in a food processor, blender or Thermomix (or chop with a knife) until very finely chopped.
  • desiccated coconut – this is a type of fine coconut that is perfect for coating the apricot balls.
Recipe Notes:
Equipment - the easiest options for chopping the apricots and chocolate are either a food processor or a Thermomix. Alternatively a blender or a sharp knife can be used.
Number of serves - this recipe makes 16 large balls or 24 small balls.
Storing and freezing - apricot balls can be stored in an airtight container in the fridge for up to 1 week. Alternatively, freeze the balls in an airtight container (or sealable plastic bags) for up to 3 months.
