Thermomix Tzatziki Dip

A classic creamy Thermomix Tzatziki Dip made with cucumber, dill, mint, garlic, Greek yoghurt and lemon.

Ingredients

  • 250 g cucumber (1 large) roughly chopped
  • 1 clove garlic or 1 tsp minced garlic
  • 2 tbs fresh dill and mint chopped
  • 400 g plain Greek yoghurt
  • 30 g olive oil
  • 15 g lemon juice
  • pinch of salt

Instructions

  • Place the cucumber, garlic and herbs into the Thermomix bowl. Chop for 3 seconds, Speed 8.
    Remove from the Thermomix and squeeze out any excess liquid with paper towel.
    Place back into the Thermomix bowl.
  • Add the Greek yoghurt, olive oil, lemon juice and salt. Mix for 5 seconds, Speed 4.
  • Serve immediately or chill until needed.

Notes

RECIPE NOTES & TIPS
  • Fresh herbs - use a combination of both fresh dill and mint or choose one.
  • Greek yoghurt - choose a thick plain Greek yoghurt.
  • Strain the excess liquid - it's important to strain the excess liquid from the cucumber once chopped. I place it onto paper towel and squeeze out the liquid.
  • Non-Thermomix Method - if you don't have a Thermomix machine, you can chop the cucumber, garlic and herbs with a knife and mix the ingredients together in a bowl.
  • Storage - store in an airtight container in the fridge for up to 4 days
  • Freezing - this recipe is not suitable for freezing.
