Blind bake the pastry if you're using your own homemade shortcrust, or defrosted shortcrust pastry sheets.

Place the cheese into the Thermomix and mix until finely grated. Set aside.

Chop the roughly cut bacon and the half onion in the Thermomix. Add the olive oil and saute until softened.

Place the eggs, cream, reserved grated cheese, salt and pepper to the bowl. Mix together on REVERSE until combined.

Pour the mixture into the prepared pastry shell and bake for 35 minutes or until golden on top and the filling is cooked through.
