Crush the Biscoff biscuits in a blender or food processor (or with a rolling pin) until they resemble fine crumbs. Mix the crumbs with the softened cream cheese.
Melt white chocolate then add the truffles to the bowl and roll the balls around until they are completely coated in chocolate. Decorate with a drizzle of Biscoff spread & crushed cookies. Chill again until set.
