Caramilk Fudge

Ingredients

  • 500 g Cadbury Caramilk chocolate
  • 395 g sweetened condensed milk

Instructions

Conventional Method

  • Grease and line a 20cm x 20cm square cake tin with baking paper and set aside. 
  • Place the sweetened condensed milk and Caramilk chocolate into a microwave-safe bowl. Melt on 50% power for 2-3 minutes, stirring each 30 seconds, or until melted. Stir well. 
  • Working quickly, spread the fudge mixture into the prepared tin.
  • Place into the fridge for 2 hours or until set, before cutting into pieces.

Thermomix Method

  • Grease and line a 20cm x 20cm square cake tin with baking paper and set aside. 
  • Break the Caramilk chocolate into pieces and grate for 10 seconds, Speed 8. Set aside.
  • Place the sweeteend condensed milk into the Thermomix bowl and heat for 5 minutes, 100 degrees, Speed 3.
  • Add the grated Caramilk chocolate and heat for 3 minutes, 80 degrees, Speed 4.
  • Working quickly, spread the fudge mixture into the prepared tin.
  • Place into the fridge for 2 hours or until set, before cutting into pieces.

RECIPE NOTES
  • Caramilk chocolate – is a type of caramelised white chocolate made famous by Cadbury that is insanely popular in Australia and New Zealand. It has a smooth, creamy caramel flavour that is completely irresistible. It can be purchased from any major supermarket in Australia or New Zealand. But if it isn't available where you live, you can use any variety of caramelised white chocolate, or swap for white chocolate instead.
  • Line your cake tin with baking paper - this will help to prevent the fudge from sticking to the pan.
  • Cooking times will vary slightly depending on the wattage of your microwave. Melt the Caramilk chocolate and sweetened condensed milk on 50% power for 2-3 minutes, stirring each 30 seconds, or until completely melted. Be careful not to over-cook it or it will become grainy. Stop cooking once the mixture is melted and combined.
  • The fudge starts to set as it cools -so once the mixture is smooth and completely combined, transfer it to the lined tin quickly, to prevent seizing.
  • Storage - as this fudge remains a little soft, it needs to be kept in the fridge. Store it in an airtight container for 3-4 weeks.
  • Freezing - freeze the fudge whole, or cut into pieces and wrap it in some baking paper before adding it to an airtight container and freezing. Keep it in the freezer for up to 2 months.
  • Variations - the great thing about this recipe is that you can add any mix-ins to the mixture before spreading it into the tin! Try adding some crushed pretzels, nuts, chocolate chips, chopped candy bars or even top it with sprinkles or some extra chocolate.
