Apricot Oat Slice

A simple and budget-friendly Apricot Oat Slice that's perfect for lunch boxes... and takes only 10 minutes to make! Plus it's fussy-kid approved too!

Equipment

Ingredients

  • 1 cup (90g) rolled oats (or quick oats)
  • 1 cup (125g) plain flour
  • cup (135g) brown sugar
  • cup (65g) desiccated coconut
  • 125 g butter chopped
  • 2 tbs golden syrup
  • 2 tbs water
  • ½ tsp bicarbonate of soda
  • 100 g dried apricots chopped
  • 100 g white chocolate chips optional

Instructions

Conventional Method

  • Preheat oven to 160 degrees celsius (fan-forced). 
  • Grease and line a 17cm X 28cm rectangular baking tray with baking paper and set aside. 
  • Combine the rolled oats, plain flour, brown sugar and coconut in a bowl.
  • Place the butter, golden syrup and water in a microwave-safe bowl. Microwave in 30 second bursts, stirring each time, until melted. Stir through the bicarb-soda.
  • Stir the butter mixture through the oat mixture. Allow to cool slightly. 
  • Fold through the chopped dried apricots and chocolate chips. 
  • Place the mixture into the tray and press down firmly.
  • Bake for approximately 25 minutes or until lightly golden brown.
  • Leave in the baking tray to cool for 10 minutes before transferring to a wire rack to cool completely.
  • When the slice has cooled completely, cut into slices (see notes).

Thermomix Method

  • Preheat oven to 160 degrees celsius (fan-forced). Grease and line a 17cm X 28cm rectangular baking tray with baking paper and set aside. 
  • Place the butter, golden syrup and water into the Thermomix bowl. Melt for 3 minutes, 80 degrees, Speed 2.
  • Add the bi-carbonate of soda and mix for 5 seconds, Speed 3. 
  • Add the rolled oats, plain flour, brown sugar and coconut to the Thermomix bowl and mix on Reverse, Speed 3, 10 seconds. Allow to cool slightly. 
  • Add the dried apricots and white chocolate chips and mix on 5 seconds, Reverse, Speed 3. Place the mixture into the tray and press down firmly.
  • Bake for approximately 25 minutes or until lightly golden brown.
  • Leave in the baking tray to cool for 10 minutes before transferring to a wire rack to cool completely. When the slice has cooled, cut it into slices (see notes).

RECIPE NOTES & TIPS
  • rolled oats – you can use quick oats too
  • plain flour – also known as all-purpose flour
  • brown sugar – light or dark brown sugar is fine to use (I generally use light brown sugar)
  • desiccated coconut – made from fresh coconut that has been shredded and dried, you can either buy it or make your own
  • butter – salted or unsalted butter is fine (my personal preference is salted butter as it balances the sweetness)
  • golden syrup – while golden syrup can be hard to find in certain parts of the world, it’s fairly easy to make at home or you can substitute with honey or corn syrup
  • water
  • bicarbonate of soda – also known as baking soda
  • dried apricots - these can be bought from the dried fruit section of your supermarket
  • white chocolate chips – optional, but highly recommended for an extra bite of sweetness
More Recipe Tips
Are oat slices healthy?
This slice is homemade and therefore contains absolutely NO additives or flavourings! While it still has a small amount of brown sugar and golden syrup, it is a far healthier option than store-bought muesli bar varieties.
Calories - Each (very generous!) slice contains approx 260 calories – however, you can omit the chocolate chips to reduce the calories if you prefer.
Dried fruit substitutes -If you don’t have dried apricots, you can use other dried fruits, like cranberries, peaches, or even dried strawberries.
Slicing - for perfectly cut slices, place the slice in the fridge for a minimum of 2 hours. Use a very sharp serrated knife to cut through the slice. 
Storing - This slice can be stored at room temperature for up to 1 week.
Freezing - freeze in an airtight container for up to 1 month.
