- 3 large avocados ripe or 4-5 small
- 30 g (¼ cup) red onion finely diced
- 2 roma tomatoes halved and deseeded, finely diced
- 6 sprigs coriander cilantro, finely chopped
- 20 g limes approx 2 limes or 20g lemon juice
- pinch sea salt
Conventional Method
Cut the avocados in half, remove the pits and place into a mixing bowl. Mash with a fork.
Add the finely diced red onion, tomatoes, coriander, lime juice and sea salt and stir to combine.
Taste and season with extra salt or lime juice if needed.
Thermomix Method
Place coriander and red onion into the Thermomix bowl and mix for 3 seconds, Speed 7.
Add the deseeded and halved tomatoes and chop for 4 seconds, Speed 7. Scrape down the sides of the bowl.
Add the avocados, lime juice and salt. Mix for 3-5 seconds, REVERSE, Speed 3.
Taste and season with extra salt or lime juice if needed.
RECIPE NOTES & TIPS
- Avocados - choose ripe avocados as they are softer and easier to mash. You can test if a avocado is ripe by giving it a light squeeze. If it squishes slightly, then it's ripe!
- Avoid soggy guacamole by removing the seeds from the inside of the tomatoes and only using the skin and flesh.
- Add chopped jalapenos or chillis to give the guacamole some heat! Omit the peppers/chilli if serving to children or anyone who is sensitive to spice.
- For best results, prepare the guacamole and serve immediately.
- If preparing ahead of time, place the guacamole into a container and pour a thin layer of lime or lemon juice over the top of the guacamole. Cover with plastic wrap and press down onto the juice. Alternatively, store in an well-sealed airtight container.
- Store in the fridge for 3-4 days.
- Guacamole is not suitable for freezing.
