Thermomix ANZAC Biscuits

Ingredients

  • 125 g butter
  • 2 tablespoons golden syrup see notes
  • 120 g brown sugar
  • ½ teaspoon bicarbonate of soda baking soda
  • 2 tablespoons cold water
  • 110 g rolled oats old fashioned oats
  • 150 g plain flour all purpose flour
  • 70 g desiccated coconut or shredded coconut

Instructions

  • Preheat oven to 160 degrees celsius (fan-forced). Grease and line three flat baking trays with baking paper.
  • Place the butter, golden syrup and brown sugar into the Thermomix bowl. Melt for 3 minutes, 100 degrees, Speed 2.
  • Add the bicarbonate of soda and the cold water to the melted butter mixture and mix for 10 seconds, Speed 3.
  • Add the rolled oats, plain flour and coconut. Mix together for 40 seconds, Reverse, Speed 2.
  • Roll tablespoons of the ANZAC dough into balls. Place on trays, 5cm apart and flatten slightly.
  • For chewy Thermomix ANZACS, bake for 10 to 12 minutes or until lightly golden. For crunchier ANZAC biscuits, increase the cooking time to 12-15 minutes.
  • Allow to cool on the baking trays for 5 minutes before transferring to a wire rack to cool completely.

Notes

RECIPE NOTES
  • Thermomix Machine - this Thermomix ANZAC Biscuit recipe can be made using any of the Thermomix models - TM31, TM5 and TM6.
  • Golden Syrup - This sweet, sticky syrup can be replaced with rice malt syrup if golden syrup is unavailable.
  • Rolled Oats - classic old fashioned rolled oats give ANZACS the best texture. However, you can also use quick oats if you prefer.
  • Desiccated Coconut - some ANZAC biscuit recipes use shredded coconut, however, I personally prefer the texture of desiccated coconut. You can use desiccated or shredded coconut depending on your preference (and what you have at home).
  • Cooking Time - I recommend cooking the biscuits for 10-12 minutes or until just lightly golden. This will give you ANZACS that are chewy on the inside and crunchy on the edges. For crunchy ANZACS, you can cook for 12-15 minutes, but no longer.
  • Storing - Store Thermomix ANZAC biscuits for up to 1 month in an airtight container at room temperature. As they contain no egg, these biscuits will last for a long time without spoiling.
  • Freezing - Freeze the unbaked dough for up to 3 months or the baked cookies for up to 1 month.
