Ingredients

  • 1000 g water (1 litre)
  • 430 g caster sugar (2 cups)
  • 1 vanilla bean split in half
  • 1 cinnamon stick optional
  • 1 kg fresh peaches firm & ripe
  • 120 g rolled oats (1⅓ cups)
  • 100 g brown sugar (½ cup)
  • 50 g plain flour (⅓ cup)
  • 115 g butter cut into small cubes

Instructions

Conventional Method

  • Preheat oven to 200 degrees celsius (180 if using fan-forced).
  • Grease a large baking dish with butter and set aside.
  • Place the water, caster sugar, vanilla bean and cinnamon into a large saucepan. Bring to a simmer and stir until the sugar dissolves.
  • Add the peaches and cover with a lid. Simmer for 15-20 minutes or until tender. Remove the set aside until cool.
  • Peel the peach skins and discard them. Chop the peaches into large chunks and place in the prepared baking dish. Set aside until needed.
  • To make the crumble, place the oats, brown sugar, plain flour and butter into a bowl. Use your fingers to squeeze and break up the lumps of butter until crumbs have formed and all of the oats and flour are completely combined with the butter.
  • Sprinkle the crumble over the peaches and place into the preheated oven.
  • Cook for 35-40 minutes or until the crumble is golden and crunchy.
  • Serve with ice-cream or cream.

Thermomix Method

  • Preheat oven to 200 degrees celsius (180 if using fan-forced). Grease a large baking dish with butter and set aside.
  • Weigh the water and caster sugar into the Thermomix bowl.
  • Insert the simmering bowl and add the vanilla bean, cinnamon stick and peaches. Cook for 15 minutes 100 degrees, Speed 2.
  • Peel the peach skins and discard them. Chop the peaches into large chunks and place in the prepared baking dish. Set aside until needed.
  • In a clean Thermomix bowl, place the oats, flour, butter and sugar into the Thermomix bowl. Press Turbo a few times until you have achieved a consistent crumble mixture (and all of the dry ingredients have been completely combined with the butter).
  • Sprinkle the crumble over the peaches and place into the preheated oven.
  • Cook for 35-40 minutes or until the crumble is golden and crunchy.
  • Serve immediately with ice-cream or cream.

RECIPE NOTES & TIPS
Ingredient notes: 
  • peaches - you can use either fresh (poached) peaches or tinned/canned peaches for this recipe
  • rolled oats – or substitute for quick oats if you prefer
  • brown sugar – either light or brown sugar are fine to use
  • butter – either salted or unsalted butter is fine to use
Peach substitutes - you can substitute the peaches for any fruit you like - check out apple crumble or apple & blueberry crumble versions… but also feel free to use any other fruit such as pears or apricots.
Storing peach crumble - Stored in an airtight container in the fridge for up to 3 days. Alternatively, freeze for up to 3 months.
