Ingredients

  • 500 g white chocolate
  • 1 1/2 cups (45g) rice bubbles or any puffed rice
  • 160 g dried cranberries (craisins)
  • 140 g sultanas
  • 120 g slivered almonds toasted
  • 1 cup (90g) desiccated coconut

Instructions

Conventional Method

  • Grease and line a 20 X 28cm rectangular slice tin and set aside. 
  • Melt the white chocolate in a large microwave-safe bowl (on 50% power for 3-4 minutes or until melted - stir every 30 seconds). 
  • Add the rice bubbles, dried cranberries, sultanas, slivered almonds and desiccated coconut and stir to combine. 
  • Spoon into the prepared tin and press down firmly. 
  • Place into the fridge for 3-4 hours (preferably overnight) before cutting into slices. 
  • Store in an airtight container in the fridge for up to 1 week. 

Thermomix Method

  • Grease and line a 20 X 28cm rectangular slice tin and set aside. 
  • Place the white chocolate into a clean and dry Thermomix bowl. Melt on 80 degrees, Speed 2, 3-4 minutes. 
  • Add the rice bubbles, dried cranberries, sultanas, slivered almonds and desiccated coconut and mix on Reverse, Speed 2 until combined (you'll need to use the spatula to help mix). 
  • Spoon into the prepared tin and press down firmly. Place into the fridge for 3-4 hours (preferably overnight) before cutting into slices. 
  • Store in an airtight container in the fridge for up to 1 week. 

Notes

RECIPE NOTES & TIPS
Substitutions
This is an incredibly versatile recipe, so you can change things up to suit your taste preference:
  • toasted slivered almonds can be substituted for pistachios, macadamias or roasted almonds
  • sultanas can be substituted for raisins (or left out if preferred)
  • dried cranberries and sultanas can be substituted with mixed dried fruit
  • you can use any brand of puffed rice in place of the rice bubbles
Tips
  • you can melt the chocolate in the microwave (see my tips here), in a Thermomix or on a double boiler on the stovetop
  • you can make this slice up to 1 week ahead of time and store it in an airtight container in the fridge
  • use a good quality white chocolate to get the best possible tasting White Christmas Slice
  • chill the slice in the fridge for a minimum of 3-4 hours (preferably overnight)
  • cut into slices using a small and sharp serrated knife
