Tomato & Basil Bruschetta with Feta

  • 1 large crusty loaf of bread
  • 8 tomatoes chopped
  • 6 basil leaves chopped finely
  • 1/2 red onion finely chopped
  • 1 tsp crushed garlic
  • 150 g soft feta cheese
  • 30 ml balsamic vinegar
  • 60 ml olive oil
  • sea salt and cracked pepper to season


  1. Place the chopped tomatoes, basil and red onion into a medium sized bowl.
  2. Add the balsamic vinegar, olive oil, garlic, sea salt and pepper and mix well.
  3. Set aside.
  4. Slice the crusty loaf of bread into slices (approximately 2cm thick).
  5. Heat a BBQ or grill plate and add lightly toast both sides of the bread.
  6. Spread the soft feta over one side of the bread.
  7. Divide the tomato mixture equally amongst the bread slices (try not to get too much of the liquid onto the bread as it may make it soggy).
