No Bake Peanut Butter Bars with White Chocolate

Equipment

  • Food processor or Thermomix

Ingredients

  • 2 cups (approx 170g) plain sweet biscuits crushed (I used Arnott's Marie biscuits - but Digestives, Graham Crackers or Rich Tea would also work fine)
  • 220 g butter
  • 1 cup (250g) peanut butter
  • 2 cups (260g) icing sugar
  • 1 ½ cups white chocolate melts
  • 4 tbs peanut butter extra

Instructions

Conventional Method

  • Grease and line a rectangular (32X20cm) baking tin with baking paper.
  • Finely crush biscuits in a food processor and set aside.
  • Place the butter and peanut butter into a microwave-safe bowl and melt on 50% power for 3 minutes (or until just melted), stirring every 30 seconds.
  • Add the icing sugar and crushed biscuits and mix to combine well.
  • Spread the mixture evenly into the baking tin and set aside.
  • Place the white chocolate and extra peanut butter into a microwave-safe bowl and melt on 50% power for 3 minutes (or until just melted), stirring every 30 seconds.
  • Mix until smooth and pour over the top of the slice.
  • Place into the fridge for 3-4 hours before removing and cutting into pieces.

Thermomix Method

  • Grease and line a rectangular (32X20cm) baking tin with baking paper.
  • Finely crush biscuits in the TM bowl on Speed 8 for 10 seconds. Scrape down the sides and repeat for another 10 seconds. Set aside.
  • Place the butter and peanut butter into the TM bowl and melt on 100 degrees, Speed 1 for 3 minutes.
  • Add the icing sugar and crushed biscuits and mix on Speed 2 for 30 seconds.
  • Spread the mixture evenly into the baking tin and set aside.
  • Place the white chocolate and extra peanut butter into the TM bowl and melt on 80 degrees, Speed 1 for 2-3 minutes (you may need to scrape down the sides of the bowl occasionally).
  • Pour over the top of the slice.
  • Place into the fridge for 3-4 hours before removing and cutting into pieces.

Notes

I like to bring the slice back up to room temperature before cutting it, so that the chocolate doesn't crack.
Store in an airtight container in the fridge for up to 1 week.
