Snickers Slice

Ingredients

  • 75 g butter
  • 1 tsp golden syrup
  • 150 g Snickers bars chopped (3 X 50g bars)
  • 3 cups (120g) rice bubbles or any puffed rice
  • ½ cup (65g) chopped peanuts
  • ¼ cup (70g) caramel sauce
  • 250 g milk chocolate
  • 2 tbs coconut oil optional

Instructions

Conventional Method

  • Grease and line a 20cm square cake pan with baking paper.
  • Melt butter, two of the Snickers bars and golden syrup on low heat in a saucepan. Mix until smooth.
    *Alternatively, melt in a microwave-safe bowl on 50% power for 3 minutes or until the butter has melted.
  • Stir in the rice bubbles, the third Snickers bar (chopped), the chopped peanuts and caramel sauce.
  • Press mixture firmly into the prepared cake pan.
  • Place chocolate melts and coconut oil in a heatproof bowl.
  • Microwave on 50% power for 3 minutes, or until melted, stirring every 30 seconds with a metal spoon.
  • Spread over slice and refrigerate until firm (approximately 4 hours).
  • Remove the slice from the refrigerator 20 minutes before cutting into squares with a warm knife.

Thermomix Method

  • Grease and line a 20cm square cake pan with baking paper.
  • Place 2 of the Snickers bars, butter and golden syrup into the Thermomix bowl. Melt on 80 degrees, Speed 2 for 3 minutes.
  • Add the rice bubbles, the remaining chopped Snickers bar, the chopped peanuts and caramel sauce. Mix on Reverse Speed 2 for 15 seconds or until completely combined.
  • Press the mixture into the prepared tin.
  • Place the chocolate melts and coconut oil into a clean Thermomix bowl.Melt on 50 degrees, Speed 3 for 2-3 minutes (scraping down the sides of the bowl occasionally).
  • Spread over slice and refrigerate until firm (approximately 4 hours).
  • Remove the slice from the refrigerator 20 minutes before cutting into squares with a warm knife.

Notes

  1. Snickers bars – chocolate bars made by Mars. They consist of nougat topped with thick caramel and peanuts that are encased in a layer of milk chocolate. You will need 150 grams (about 3 bars) for the slice. And you can add extra, chopped Snickers to the top of the slice, if you like!
  2. Rice Bubbles – also called Rice Krispies. They add both crunch and chewiness to the slice. Rice Bubbles are cereal made from puffed, white rice that can be found in supermarkets. If you need the slice to be gluten-free, similar puffed rice products can be found in supermarkets and health food stores.
  3. If cooking on the stovetop, keep an eye on the mixture in the saucepan and cook over very low heat, so that the mixture does not catch on the bottom or split.
  4. Add-ins – try sprinkling some peanut M&Ms, Reeses’ peanut butter cups, mini chocolate chips or more chopped Snickers over the top of the melted chocolate layer before chilling.
  5. Leave the slice at room temperature for 20 minutes, to make slicing easier.
  6. The butter, golden syrup and Snickers can be melted in the microwave, stovetop or Thermomix, depending on preference.
  7. For best results, make sure that you use a fresh box of Rice Bubbles/Rice Krispies. Stale Rice Bubbles will not be as crunchy!
  8. The Snickers will not melt completely, some of the nougat will remain lumpy. This is fine and will add to the chewy texture of the slice.
  9. Press the mixture into the tin very firmly so that it holds together nicely.
  10. Allow the baking paper to hang over the edges of the tin slightly, as this will help you to remove the slice from the tin when set.
  11. How to cut the slice; For clean, unbroken slices, take the slice out of the fridge 20-30 minutes before slicing. This will allow the slice to soften slightly, making it easier to cut. Use a warm and dry serrated knife to cut through the chocolate layer and then push through the Rice Bubble layer.
  12. Storage. Snickers slice can be stored in an airtight container in the fridge for up to 1 week.
  13. Freezing; Wrap it whole, or wrap the individual slices and freeze it in an airtight container for up to 1 month. To thaw, place the slice in the fridge overnight, or place the slices at room temperature for 30-60 minutes.
