  • 1/2 red onion
  • 425 g can chickpeas rinsed and drained
  • 1/4 cup panko crumbs or any breadcrumbs
  • 1/2 tsp paprika
  • 1/2 tbs ground cumin
  • 3 tbs finely chopped fresh parsley
  • 1 tbs minced garlic
  • 2 tbs lemon juice
  • salt and pepper to season

  • Preheat oven to 190 degrees celsius (fan-forced) and line a baking tray with greaseproof baking paper.
  • Place the red onion into the Thermomix bowl. Chop by slowly increasing to Speed 4. Scrape down the bowl and repeat until finely chopped.
  • Add all of the remaining ingredients to the Thermomix bowl.
  • Mix by pressing Turbo 5-10 times or until the mixture has combined (it's fine for the mixture to still be a little chunky).
  • Roll tablespoonfuls of the mixture into balls and place on the prepared tray.
  • Lightly spray with olive oil cooking spray.
  • Bake in the oven for 10 minutes.
  • Take the tray out of the oven, turn the balls over and bake for another 15 minutes or until golden and crispy.
  • Serve with tabbouleh and hummus.
